Why do we love this wine?

Powerful and compelling right out of the gate. It demands a second, third, fourth pass under the nose. There is so much intensity and fervour. Red and black fruits in a swirl of earth, umami, and framed by some sweet pastry aromatics (from top quality oak influence). Bright and vivacious in the mouth, energetic and enduring. This is a wine you can't put down, you'll keep swirling, sniffing, sipping as more details reveal themselves - an utter delight to drink indeed.

Halliday Wine Companion

Halliday Wine Companion

"From the original 1972 plantings at the highest elevation on this pioneering vineyard; 20-30% whole bunches; natural ferment and matured in French hogsheads and puncheons (30% new) for 10 months. A bright, medium, crimson purple. A special wine from the first whiff, there are aromas of red and black fruits, floral notes, spice-rack spices together with complex ferrous notes. Concentrated but pure, structured and balanced. A special wine in the making and one of the very best 2021 Yarra pinots I tasted for this year's Companion. So long. Drink a bottle now but worth putting some away to enjoy; 10–15 years from now." Phillip Rich, 97 Points Halliday Wine Companion

Frequently Asked Questions

The 97-point Halliday Wine Companion rating reflects this wine's exceptional complexity and layered character that unfolds with each sip. The combination of intense red and black fruit concentration, earthy umami notes, and expertly integrated oak creates a compelling sensory experience that keeps evolving in the glass. This level of sophistication and balance is what separates outstanding Pinot Noir from merely good examples, particularly when it comes from a Five Red Star rated winery like Seville Estate.

The Yarra Valley's cool climate and diverse soil types create perfect conditions for Pinot Noir's notoriously finicky nature. The region's temperature variations between day and night help preserve the grape's natural acidity while allowing flavours to develop slowly and completely. This terroir influence is evident in this Reserve bottling's bright, vivacious character and the complex interplay between fruit intensity and earthy undertones that Yarra Valley Pinot Noir is renowned for.

Serve this wine slightly below room temperature at around 14-16°C to highlight its elegant structure and aromatic complexity. The light-bodied nature means it won't overpower delicate dishes, making it perfect with duck, salmon, or mushroom-based cuisine. Given its compelling aromatics and evolving character, use a large bowl glass and allow it to breathe for 30 minutes - this wine rewards patience as more details reveal themselves over time.

The bright red fruit profile and spice notes make this wine exceptionally food-friendly, particularly with dishes that echo its flavour complexity. Try it with duck breast with cherry sauce, where the sour cherry notes create a beautiful bridge between wine and food. The raspberry characteristics also pair beautifully with lamb dishes featuring herbs like thyme or rosemary, while the underlying spice elements complement aged cheeses and charcuterie perfectly.

While this Reserve Pinot Noir is already showing beautifully with its intense aromatics and vivacious character, it has the structure and complexity to develop further over 5-8 years. The quality oak integration and underlying earthiness suggest it will gain additional layers of tertiary flavours with proper cellaring. However, given its current drinking pleasure and the way it reveals new details with each sip, there's no need to wait - it's performing exceptionally well right now.
