Why do we love this wine?

A celebration of the establishment of Saltram Wines in 1859, this wine truly is a love letter to the greater Barossa region and the unique wine-style that made it famous. Made in the traditional Barossan style, this is a beautifully concentrated wine with plenty of complexity and a lot of life left ahead. Aromas of dark plums, black cherries and blackberries with hints of pepper and spices. The is palate rich and dense, highlighting similar brooding fruit to the nose with the addition of savoury black liquorice. A stint in new oak barrels has brought complexity in the form of spicy, chocolatey notes and persistent, fine-grained tannins. Iconic for a reason, this is a wine that has just entered its perfect drinking window and will continue to develop and soften for many many years to come,

Frequently Asked Questions

The S5 represents Saltram's premium expression of traditional Barossan winemaking, celebrating their 1859 establishment with exceptional vineyard selection and extended oak maturation. Unlike many modern Shiraz wines that prioritise immediate drinkability, this follows the classic Barossa approach of creating wines built for longevity. The combination of concentrated fruit, new oak complexity, and fine-grained tannin structure creates a wine that embodies the region's reputation for producing some of Australia's most age-worthy Shiraz.

This wine has just entered its optimal drinking window but possesses the structure and concentration to develop beautifully for decades to come. The dense fruit core, balanced acidity, and quality tannins typical of premium Barossa Shiraz suggest it will continue evolving and softening through the 2030s and beyond. As it ages, expect the primary fruit flavours to integrate further with the oak-derived spice and chocolate notes, while developing the complex tertiary characters that make aged Barossa Shiraz so prized by collectors.

The wine's rich, dense palate and savoury liquorice notes make it an ideal match for robust red meats, particularly slow-cooked lamb shanks, beef brisket, or char-grilled steaks. The chocolate and spice complexity from oak ageing also complements game meats like venison or duck, while the wine's full body can stand up to strongly flavoured cheeses. The traditional Barossan style means it pairs exceptionally well with barbecued meats, reflecting the region's food culture and the wine's inherent richness.

The 98-point score and Trophy for Best Shiraz at the Barossa Wine Show reflects the wine's exceptional expression of both vintage and terroir. The 2017 vintage was particularly favourable in the Barossa, allowing for optimal ripening and concentration, while Saltram's traditional winemaking approach maximised the fruit's potential. Competition judges would have recognised the wine's perfect balance between power and elegance, its complex layering of flavours, and most importantly, its authentic representation of what makes Barossa Shiraz world-renowned.

Upon opening, you'll encounter intense aromas of dark stone fruits - plums and black cherries - alongside blackberry richness, all lifted by distinctive pepper and spice notes characteristic of quality Shiraz. The palate delivers on the nose's promise with dense, brooding fruit flavours complemented by savoury black liquorice complexity. The new oak integration provides chocolatey depth and fine-grained tannins that give structure without overwhelming the fruit, creating a wine that's immediately impressive yet clearly built for further development.
