This is a power packed heavyweight cabernet that will easily cellar for another decade. Brooding with massive blackberry fruit character, offset by medicinal, minty aromatics, powerful tannins and a fine, prolonged finish.

Why do we love this wine?

This cellared cabernet comes to us from a Five Red Star Halliday-rated winery. Robert Parker called the winemaker behind this "one of planet Earth's greatest winemakers". Deep garnet in colour, this 2011 cabernet is the exact kind of red you want to pair with wagyu ribeye and good company. The nose and palate are just gorgeous. Classic cassis and plummy fruit playfully lifted by mint, cedar, leather, tobacco, and vanilla are supported by smooth yet firm tannins that provide structure and complexity. This is the kind of wine that unfurls on the palate, offering more to discover with every swirl of the glass. Sit down. Relax. Drink it in, Mofo - this is something truly rare and truly special.

Frequently Asked Questions

This wine comes from a Five Red Star Halliday-rated winery with a winemaker Robert Parker called 'one of planet Earth's greatest winemakers', yet it's being offered at a significantly reduced price. The 2011 vintage has had over a decade to develop complexity in the cellar, making wines of this calibre increasingly rare and valuable. When prestigious producers release aged stock at discounted prices, it creates exceptional value for collectors and enthusiasts.

McLaren Vale's Mediterranean climate and diverse soils create ideal conditions for Cabernet Sauvignon, producing wines with intense fruit concentration and distinctive regional character. The warm days and cool sea breezes from the nearby coast help retain acidity while developing the rich cassis and plummy flavours evident in this wine. The region's terra rossa soils contribute to the wine's structured tannins and the earthy, tobacco notes that complement the fruit.

The 2011 vintage in South Australia was characterised by a long, cool growing season that allowed grapes to ripen slowly and develop complex flavours while retaining natural acidity. This extended hang time contributed to the wine's ability to age gracefully, developing the secondary characteristics like leather, cedar, and tobacco that are now evident after more than a decade in bottle. Cool vintage Cabernets often show exceptional longevity and food-pairing versatility.

Decant this wine 1-2 hours before serving to allow the complex aromatics to fully express themselves and any sediment to settle. Serve at 16-18°C to showcase both the fruit intensity and the developed tertiary characters like vanilla and mint. The wine's medium body and smooth tannins make it perfect for rich dishes like wagyu beef, where the wine's structure won't overpower the meat's delicate marbling and flavour.

The wine's savoury profile with leather and mulberry notes makes it exceptional with grilled red meats, particularly those with herb crusts or mushroom accompaniments that echo the earthy characteristics. The smooth yet firm tannins provide enough structure to cut through rich, fatty dishes while the mint and cedar notes complement rosemary, thyme, and other Mediterranean herbs. Aged hard cheeses like vintage cheddar or Parmigiano-Reggiano also pair beautifully with the wine's developed complexity.
