Petit Verdot is one of the most intensely coloured and tannic grape varieties, originally from Bordeaux where it was used in tiny amounts to add structure and colour to blends. In warmer climates like McLaren Vale, it can ripen fully to produce standalone wines with exceptional concentration and power. The variety naturally produces very low yields, which concentrates flavours into dark, dense berries that create wines with remarkable depth and aging potential.

Extended oak aging is essential for taming Petit Verdot's naturally robust tannins and integrating the wine's powerful fruit character. The 28-month maturation period allows the wine's intense flavours to marry with the oak, creating complexity while softening the variety's inherently firm structure. French oak specifically contributes subtle spice notes and refined texture that complement rather than overwhelm the wine's muscular fruit profile.

Old vines typically refer to grapevines over 30-40 years old, though there's no official definition. These mature vines naturally produce smaller yields because their root systems are deeply established, drawing nutrients and water from deeper soil layers. The result is grapes with more concentrated flavours and better balance, which translates to wines with greater complexity, intensity, and aging potential than those from younger vines.

Serve this wine at cellar temperature (16-18°C) in large red wine glasses to allow its complex aromatics to develop. The wine's rich, savoury character and firm tannins make it perfect for grilled red meats, game dishes, or aged hard cheeses. Its olive and spice notes also complement Mediterranean cuisine, particularly dishes with herbs like rosemary or thyme.
