Hand-picked from a single-vineyard that hasn't seen herbicides in over 10 years, this medium-bodied bombshell has blown us away with both its approachability and its complexity. 50% whole bunches and a gentle kiss of new French oak create a stage for pristine red fruit to sing on, and boy is it singing! Red cherries, ripe strawberries and just a touch of regional spice, this one's ready to go the distance. This wine comes from a single vineyard that's been herbicide-free for over a decade, creating healthier soil microbiomes that contribute to more complex flavour development. The 50% whole bunch fermentation technique adds structural tannins and spicy complexity that's particularly well-suited to Yarra Valley's cool climate. Combined with its 96-point Halliday rating and Special Value Award, it represents exceptional quality from one of Australia's premier Pinot Noir regions.

Pinot Noir has remarkable aging potential when made with quality fruit and proper winemaking techniques like those used here. While the wine is drinking beautifully now with its fresh red fruit character, the tannin structure from whole bunch fermentation and French oak will allow it to develop secondary flavours over 5-8 years. By 2031, expect the bright cherry and strawberry notes to evolve into more complex earthy, mushroom, and forest floor characteristics typical of aged Burgundian-style Pinot Noir.

Whole bunch fermentation means 50% of the grapes were fermented with their stems still attached, rather than being destemmed first. This traditional Burgundian technique adds structural tannins, enhances the wine's aging potential, and contributes subtle spicy notes that complement Pinot Noir's natural fruit character. The stems also create small pockets during fermentation that promote different extraction levels, adding complexity to the final wine's flavour profile.

Serve this Pinot Noir slightly below room temperature at 14-16°C to highlight its elegant fruit character and prevent the alcohol from dominating. Decanting for 30 minutes will help integrate the French oak and allow the wine's aromatics to fully express themselves. The wine's medium body and bright acidity make it perfect with duck, salmon, mushroom dishes, or aged cheeses, where it won't overpower delicate flavours.
