Why do we love this wine?

There's no secret to this wine, just high-quality fruit from high-altitude Hills vineyards and some clever use of oak. Sounds simple enough, but the reality is that no matter how simple the winemaking process may be, the end product is a complex beast. Black and red fruits meet and intertwine through the nose and into the palate with distinctly regional notes of savoury spice and forest floor. The bright natural acid and fruit weight allows this wine to be enjoyed with or without food whilst and underlying seriousness and complexity create a pinot that'll hold up alongside anything from cheese boards to venison. Fans of Burgundian pinots will find plenty to get excited about here.

Frequently Asked Questions

The Adelaide Hills' high-altitude vineyards provide the cool climate conditions that Pinot Noir thrives in, allowing for slower ripening and better retention of natural acidity. This elevation creates the perfect environment for developing the complex flavour profile found in this wine, with its distinctive regional characteristics of savoury spice and forest floor notes. The cooler temperatures also help preserve the delicate fruit characters that make this variety so prized.

This Adelaide Hills Pinot Noir shares many hallmarks with classic Burgundy styles, particularly in its earthy complexity and forest floor characteristics. While Burgundian Pinots are known for their mineral-driven terroir expression, this Australian interpretation offers a more fruit-forward approach with black and red berry flavours, yet maintains the underlying seriousness and structural complexity that Burgundy lovers appreciate. The bright natural acidity and elegant style make it a compelling New World interpretation of this classic varietal.

The wine's versatility shines through its ability to complement both light and substantial dishes, from cheese boards to venison. Its bright acidity and earthy undertones make it excellent with mushroom-based dishes, roasted chicken, or salmon, while the forest floor notes pair beautifully with game birds and aged cheeses. The light body means it won't overpower delicate preparations, yet the underlying complexity provides enough structure for heartier fare.

Clever oak usage in Pinot Noir typically involves restraint and precision, using oak to enhance rather than dominate the wine's natural fruit characteristics. This might involve using older barrels that impart subtle flavours without overwhelming tannins, or employing a combination of different oak treatments to add complexity while preserving the variety's inherent elegance. The goal is to create additional layers of flavour and texture that complement the fruit, spice, and earthy elements already present.

The 2023 vintage in Adelaide Hills benefited from ideal growing conditions that allowed for optimal fruit development and flavour concentration. This particular year likely featured the perfect balance of warm days and cool nights that Pinot Noir requires, resulting in grapes with excellent natural acidity retention and complex flavour development. The 'killer vintage' designation suggests exceptional quality across the region, with wines showing both immediate appeal and long-term ageing potential.
