Why do we love this wine?
Nothing rushed. Nothing standardised. Just a small parcel of old vines, treated with the kind of patience that genuinely great Pinot Noir demands, wherever in the world it's made. Picked on the 5th of September, 2022, with half the ferment left as whole clusters in wooden tanks, checked and worked by hand every single day - pump-overs or punch-downs, whichever the daily taste called for. Eighteen days on skins before the free-run wine was drawn off and the rest pressed, then into 228-litre barrels for 12 months, tasted constantly along the way. From there, two months in tank to settle before bottling, with sulphites held back entirely until after malolactic fermentation, only added right before bottling.
