Inspired by the iconic jet that took it to the world, Bin 707 is linked to Max Schubert's dream of crafting a great Australian red that could last at least 20 years. First vintaged in 1964, this is a perfect cabernet sauvignon representation of Penfolds' 'House Style' - intensely flavoured fruit, completion of fermentation and maturation in new oak, and their legendary understanding of multi-vineyard, multi-region fruit sourcing.

Why do we love this wine?

This vintage brings together vineyards from McLaren Vale, Barossa Valley and Padthaway, matured in American oak for a year and a half - all of it new. No half measures here. This release is a monumental wine. Impressive, exhibiting serious length and exuberance that just doesn't quit. The highlight is a ripe core of dark cherry chocolate that anchors everything beautifully. The nose opens with plums, chocolate (which never really abandons you), spices, plenty of oak that's been deftly handled, cassis, liquorice, smoked meats, graphite and black cherries. Give it time in the glass and those cassis, dark cherry and kirsch notes emerge more and more, unfolding into something genuinely captivating. Will easily sail through the next twenty to thirty years. Built for the ages.

Frequently Asked Questions

Bin 707 represents Penfolds' flagship Cabernet Sauvignon, crafted exclusively from premium South Australian vineyards across McLaren Vale, Barossa Valley, and Padthaway. The wine undergoes 18 months maturation in 100% new American oak, creating exceptional complexity and structure. This multi-regional blending approach allows Penfolds to capture the best characteristics from each terroir, resulting in a wine that consistently achieves critical acclaim with scores of 97-98 points from leading wine critics.

The 2023 Bin 707 is built for exceptional longevity, with the tasting notes indicating it will easily develop over 20-30 years. While approachable now, the wine's full-bodied structure, new American oak integration, and concentrated fruit core suggest optimal drinking will occur between 2030-2045. The high-quality tannin structure and balanced acidity typical of premium Cabernet Sauvignon ensure graceful evolution, with secondary and tertiary flavours developing complexity over decades of proper cellaring.

The wine's rich dark chocolate and plum characteristics, combined with its full-bodied palate weight, make it ideal for robust red meat dishes. Consider pairing with aged beef steaks, lamb shanks, or game meats where the wine's structure can complement rich proteins. The spice notes and American oak influence also work beautifully with barbecued meats or dishes featuring earthy mushrooms and herbs, while the wine's intensity can stand up to strong aged cheeses.

The 'Max 1 Per Customer' restriction reflects both the wine's premium status and limited production quantities typical of flagship wines. Penfolds Bin 707 is considered an investment-grade wine, with strong collector demand driven by its consistent critical acclaim and aging potential. This allocation system ensures broader customer access to this sought-after vintage while preventing bulk purchasing that could limit availability for individual wine enthusiasts and collectors.

Currently, the 2023 vintage showcases primary fruit flavours of dark cherry and plum, with prominent American oak influence and spice characteristics. The new oak provides structure but may initially dominate the palate. After 10 years of cellaring, expect the oak to integrate seamlessly while secondary flavours like leather, tobacco, and earthy complexity emerge. The wine's graphite and liquorice notes will become more pronounced, creating a more harmonious and sophisticated drinking experience with enhanced textural complexity.
