Inspired by the iconic jet that took it to the world, Bin 707 is linked to Max Schubert's dream of crafting a great Australian red that could last at least 20 years. First vintaged in 1964, this is a perfect cabernet sauvignon representation of Penfolds' 'House Style' - intensely flavoured fruit, completion of fermentation and maturation in new oak, and their legendary understanding of multi-vineyard, multi-region fruit sourcing.

Why do we love this wine?

The 2022 vintage brings together exceptional grapes from Coonawarra, Wrattonbully, Barossa Valley and McLaren Vale. The season was generally cool, with prevailing conditions delaying harvest by several weeks. That extra hang time allowed the grapes to develop lovely varietal characters and beautifully balanced ripe tannins. Matured for 16 months in 100% new American oak hogsheads - this is serious winemaking with no corners cut. Full-bodied with proven cellaring potential, Bin 707 holds a secure place among the ranks of Australia's finest cabernets for very good reason. Rich, powerful and built to last decades. This is Australian cabernet royalty.

Frequently Asked Questions

The 2022 vintage benefited from an unusually cool growing season that delayed harvest by several weeks, allowing the grapes extended hang time on the vine. This extra maturation period enabled the development of exceptional varietal character and beautifully balanced ripe tannins that distinguish this vintage. The cooler conditions also helped preserve the natural acidity while concentrating flavours, creating a wine with both power and elegance that exemplifies why Bin 707 is considered Australian cabernet royalty.

The exclusive use of new American oak hogsheads for 16 months is a deliberate choice that reflects Penfolds' uncompromising approach to premium winemaking. American oak imparts distinctive vanilla, coconut and spice characteristics that complement cabernet sauvignon's natural structure, while the new oak provides maximum flavour extraction and tannin integration. This intensive oak treatment requires exceptional fruit quality to balance the wood influence, which is why only the finest grapes from premium regions make it into Bin 707.

Bin 707 is built for decades of cellaring, with the 2022 vintage having the structure and concentration to evolve beautifully for 20-30 years or more. While approachable now for those who enjoy powerful, oak-influenced styles, the wine will reward patience as the tannins soften and the complex flavours integrate over time. The cool 2022 vintage conditions have created a wine with excellent natural acidity, which acts as a preservative and ensures graceful ageing in proper cellar conditions.

The rich, powerful profile of Bin 707 demands equally substantial food pairings that can match its intensity without being overwhelmed. Prime cuts of beef like ribeye or porterhouse steaks are classic matches, while the wine's chocolate and coconut notes from American oak also complement game meats like venison or lamb. Aged hard cheeses, particularly those with nutty characteristics, create beautiful flavour bridges with the wine's complex oak influence and concentrated fruit.

The remarkable consistency of high scores from Australia's most respected wine critics - with multiple 97-98 point ratings - indicates this is an exceptional vintage that has impressed across the board. These scores place the 2022 Bin 707 among the finest Australian cabernets ever made, reflecting not just immediate drinking pleasure but long-term cellaring potential. When critics of different palate preferences and scoring philosophies align so closely, it signals a wine of extraordinary quality that transcends individual taste preferences.
