Priorat isn’t everyday wine country - it’s rugged, low-yielding, and uncompromising, which makes every bottle feel special. Immortalis is a perfect snapshot of that terroir - and if you're an Aussie shiraz drinker - this'll feel a bit familiar - concentrated, smooth and built for both food and contemplation. Pair it with slow-cooked lamb, charred vegetables, or just good mates who appreciate a red with a bit of oomph.

Why do we love this wine?

Priorat is one of Spain’s most dramatic wine regions - steep rocky slopes, ancient vines clinging to slatey earth, and a reputation for producing some of the country’s most powerful reds. Immortalis is exactly that: bold yet balanced, born from harsh conditions that force the vines to dig deep and produce fruit with intensity and character. In the glass, it’s a shimmering, vibrant red with aromas of wild berries and a touch of spice. The palate is full-bodied but fresh, packed with ripe fruit, silky yet firm tannins, and just the right line of acidity to keep it lively. The finish is long, savoury and deeply satisfying - the kind of wine that lingers well after the last sip.

Frequently Asked Questions

Priorat's unique terroir of steep, rocky slopes and ancient slate soils creates some of Spain's most concentrated wines. The harsh conditions force vines to struggle, sending roots deep into the mineral-rich llicorella (slate) to find water and nutrients. This stress produces smaller yields but incredibly intense fruit with distinctive mineral complexity that you simply can't replicate elsewhere.

The name 'Immortalis' reflects the enduring character of Priorat's ancient vines and the wine's age-worthy potential. 'Viñas de Altura' translates to 'high altitude vineyards', referring to the elevated vineyard sites that benefit from cooler temperatures and greater diurnal variation. This altitude helps preserve acidity while allowing full phenolic ripeness, creating the wine's signature balance of power and freshness.

While Australian Shiraz tends toward ripe, jammy fruit and chocolate notes, Priorat's version shows more restraint and mineral complexity. The slate soils and Mediterranean climate with cool nights create a Shiraz with darker fruit flavours like black cherry, plus distinctive herbal and floral notes like violets and liquorice. The tannin structure is firmer and more structured, reflecting the region's ability to produce elegant yet powerful expressions.

This wine's savoury, textured profile makes it perfect for rich, flavourful dishes that can match its intensity. Think grilled lamb with rosemary, aged beef steaks, or hearty stews with root vegetables. The wine's mineral backbone and firm tannins also complement hard cheeses like aged Manchego, while its fruit concentration pairs beautifully with game meats or even dark chocolate desserts.

The 2022 is drinking beautifully now, showing vibrant fruit and well-integrated tannins that make it approachable in its youth. However, Priorat wines are renowned for their ageing potential - this Immortalis will continue developing complexity over the next 8-10 years. The wine's excellent ratings from critics like James Suckling suggest it has the structure and balance to reward patient cellaring, evolving into something even more sophisticated with time.
