Don't worry, try one of these

Why do we love this wine?

Imagine being cabernet: it seems everywhere it grows offers picturesque views and a wealth of people who are dedicated to making great wine. Cabernet is a beast that needs taming: and in the hands of Metzer, this has been managed brilliantly while keeping a ‘hands-off’ (is that an oxymoron?) approach.

Skip to the end if you don’t want to hear about the winemaking hoo-ha: the parcels were fermented with wild yeasts, with manual punching down to extract gentle flavours and tannins from those hardy cabernet skins. In this winery, it’s all about being gentle, with grapes gravity fed and basket-pressed before extended time in French barrels (30% new).

Plums, mulberry and charred meat galore. A hint of cured pork with fennel seed, a dash of tobacco spice and a whiff of herbs such as bay, thyme and carraway mingle with the rich blackberries picked straight from a wild bush. This is a seriously sophisticated wine.

Frequently Asked Questions

This wine showcases artisanal winemaking with wild yeast fermentation and gentle extraction techniques that preserve the grape's natural character. The gravity-fed processing and basket pressing create a more refined texture compared to industrial methods. Extended ageing in 30% new French oak adds complexity without overwhelming the fruit, resulting in a sophisticated wine that reflects both terroir and careful craftsmanship.

Stellenbosch's Mediterranean climate and diverse soils create ideal conditions for Cabernet Sauvignon, allowing for slow ripening that develops complex flavours. The region's warm days and cool nights help retain acidity while building concentration, evident in this wine's rich blackberry and plum notes. The terroir contributes to the wine's savoury elements like herbs and spice, which are characteristic of premium Stellenbosch Cabernets.

The wine's charred meat and cured pork notes make it perfect for grilled steaks, lamb shanks, or venison. The fennel and herb characteristics complement Mediterranean dishes with rosemary or thyme, while the rich tannins can stand up to aged cheeses and charcuterie. The tobacco spice and cedar notes also pair beautifully with slow-cooked beef stews or barbecued ribs.

While this wine is drinking beautifully now with its integrated tannins and developed flavours, Cabernet Sauvignon from quality producers like Metzer can age gracefully for 8-12 years. The French oak treatment and natural winemaking approach suggest good cellaring potential, where the wine will develop more tertiary flavours and softer tannins. Current drinking offers vibrant fruit expression, while cellaring will reward with greater complexity.

The Five Stars rating from Platters Wine Guide places this among South Africa's top tier wines, while the 4.1 Vivino score reflects strong consumer appreciation across vintages. These ratings indicate consistent quality from Metzer Wines and suggest the 2018 vintage maintains their reputation for excellence. The 'Boutique Producer' recognition highlights the small-scale, quality-focused approach that distinguishes this wine from commercial alternatives.
