If you're a fan of Coonawarra cabernet in the slightest, you're going to absolutely love this wine. This was built to honour the climate and terroir of one of Australia's most-highly-rated cabernet regions – Wrattonbully (riiiight next to Coonawarra). Be warned: This is not for the faint of heart...

Why do we love this wine?

Specifically crafted to showcase the 'Cavelands' sub-region with its layers of Terra Rossa soils, limestone caves, pristine waters and maritime climate that makes this place so bloody special. Big, bold, full-bodied and loaded with dark fruits and the expected 'green' notes that make this variety what it is. This is an intense, fruit-driven beast with abundant juicy fruit flavours and a rich palate that doesn't mess around. All of this frivolity is kept in check by a classic cabernet structure, beautiful acid, fantastic tannin and that minty, eaucalypty goodness that us cab lovers crave so much!

Frequently Asked Questions

The Cavelands sub-region of Wrattonbully features unique Terra Rossa soils layered over limestone caves, creating exceptional drainage and mineral complexity. This geological foundation, combined with the maritime climate and pristine underground waters, produces Cabernet Sauvignon with distinctive intensity and structure. The limestone influence contributes to the wine's beautiful acid backbone and helps develop those classic 'green' herbaceous notes that define quality Australian Cabernet.

The eucalyptus and mint characteristics in this Cabernet Sauvignon come from naturally occurring compounds called methoxypyrazines, which are more pronounced in cooler climate regions like Wrattonbully. These 'green' notes are actually a hallmark of premium Australian Cabernet Sauvignon and indicate optimal ripeness rather than under-ripeness. The maritime influence in this region helps preserve these desirable aromatics while still achieving full flavour development, creating the perfect balance between fruit intensity and herbaceous complexity.

The 2024 vintage has earned a 'Killer Vintage' rating of 90 points, indicating exceptional growing conditions that year. Young Cabernet Sauvignon from outstanding vintages like this often shows more vibrant fruit expression and tighter tannin structure, which will evolve beautifully over the next 5-8 years. The combination of ideal weather patterns and Merite's careful vineyard management has produced a wine with both immediate appeal and excellent aging potential.

This full-bodied Cabernet Sauvignon with its rich tannin structure and dark fruit flavours pairs magnificently with red meat dishes, particularly grilled lamb with rosemary or aged beef steaks. The wine's eucalyptus notes complement herb-crusted roasts beautifully, while the tobacco undertones make it excellent with barbecued meats or hearty stews. The structured tannins can handle rich, fatty foods and will actually soften and integrate better when paired with protein.

While this Cabernet is delicious now with its abundant juicy fruit flavours, its classic structure and fantastic tannins suggest excellent cellaring potential of 8-12 years. The 2024 vintage's youth means the tannins will continue to soften and integrate, while the dark fruit flavours will develop secondary characteristics of leather, cedar, and spice. If drinking now, decanting for 30-60 minutes will help open up the wine and showcase its full complexity.
