Why do we love this wine?

Full of oomph and bravado, this strapping back-vintage cab is not for the faint of heart. Packed with succulent, ripe berry fruits, charry and vanillin oak and leather – this is not one to pull the bat away from big, bold flavours. Marked by a toasty oak profile, there's a whack of tobacco, clove and freshly roasted coffee perfuming the nose and palate. This is quite the wine to impress.

Frequently Asked Questions

This 2017 Cabernet Sauvignon represents optimal drinking maturity after six years of careful cellaring. Museum releases showcase how premium Coonawarra Cabernet develops complex secondary characteristics - the leather, tobacco and coffee notes have evolved from the primary fruit flavours. The extended bottle age has allowed the robust tannins to integrate beautifully while maintaining the wine's impressive structure and intensity.

Coonawarra's famous terra rossa soil over limestone bedrock creates ideal conditions for Cabernet Sauvignon, providing excellent drainage while retaining moisture during dry periods. The cool maritime climate extends the growing season, allowing grapes to develop intense flavours while maintaining natural acidity. This terroir combination produces the distinctive eucalyptus and menthol characteristics evident in this wine, alongside the rich blackcurrant fruit that defines premium Australian Cabernet.

Serve this wine at 16-18°C and decant for at least 30 minutes to allow the concentrated flavours to open up fully. The wine's bold character and high tannin structure make it perfect for pairing with rich, protein-heavy dishes like aged steaks, lamb shanks, or mature hard cheeses. Given its 95-point rating and museum status, this wine deserves proper glassware - use large Bordeaux-style glasses to concentrate the complex aromatics.

The earthy, savoury elements of tobacco and leather pair beautifully with game meats like venison or duck, where the wine's intensity matches the rich, gamey flavours. Slow-cooked dishes with herbs like rosemary and thyme echo the wine's complex spice profile, while aged cheeses such as vintage cheddar or Parmigiano-Reggiano complement the developed, nutty undertones. The charry oak also makes it excellent with barbecued or grilled meats.

Geoff Merrill is renowned for crafting bold, uncompromising wines that showcase varietal character and regional terroir without restraint. His approach to this Pimpala Vineyard Cabernet emphasises maximum flavour extraction and generous oak treatment, creating the wine's signature 'oomph and bravado'. The toasty, vanillin oak profile suggests careful barrel selection and extended maturation, while the concentrated fruit flavours reflect low-yielding vineyard practices that prioritise quality over quantity.
