Why do we love this wine?

It comes out the gate with bright maraschino cherry, Damson plum, black pepper and a lifted sage note that keeps things fresh and aromatic. It's vibrant and expressive right from the first pour. Underneath that brightness there's real substance. Fruit sourced from three distinct sites - ironstone, limestone and 75-year-old bush vines that bring the kind of depth you simply can't manufacture - then 24 months in 40% new French oak that adds a gorgeous savoury complexity without overwhelming the fruit. The tannins land soft and velvety, the finish is long and composed. Bright on the surface. Serious underneath. Very easy to drink either way.

The fruit comes from three distinct McLaren Vale sites featuring ironstone and limestone soils, plus remarkable 75-year-old bush vines. These ancient vines have developed deep root systems that access unique mineral profiles and produce naturally concentrated fruit with exceptional complexity. The varied soil types contribute different textural elements - ironstone adds structure and spice, while limestone brings elegance and finesse to the final blend.

The 24-month maturation in 40% new French oak strikes an ideal balance between fruit expression and savoury complexity. French oak is prized for its tight grain and subtle vanilla notes that complement rather than dominate Shiraz's natural pepper and spice characteristics. The extended ageing period allows the wine to integrate fully, developing those velvety tannins while maintaining the bright fruit aromatics that make this wine so approachable.

The lifted sage note and bright maraschino cherry flavours set this apart from heavier, more jammy McLaren Vale Shiraz styles. This freshness comes from careful vineyard management and the influence of those old bush vines, which naturally regulate yield and maintain acidity. The winemaking approach preserves the fruit's vibrancy while still delivering the region's signature depth and power, creating a wine that's both expressive and sophisticated.

The wine's savoury complexity and soft tannins make it perfect for grilled lamb with herbs, matching the sage aromatics beautifully. The black pepper notes complement char-grilled steaks, while the bright fruit acidity cuts through rich dishes like braised short ribs or aged hard cheeses. The wine's balance means it won't overwhelm lighter fare like roasted vegetables with Mediterranean herbs either.

With its excellent structure from old vine fruit and quality French oak maturation, this Shiraz has strong cellaring potential of 8-12 years from vintage. The soft tannins and balanced acidity provide the framework for graceful ageing, while the concentrated fruit will develop tertiary flavours of leather, earth and dried herbs.
