Why do we love this wine?

The secret is in the method. Appassimento means the grapes are partially dried before fermentation, concentrating every ounce of sugar, flavour and richness before a single drop of wine is made. It's the same ancient technique behind Amarone, and the results here are just as spectacular. Big, powerful, weighty wine; dried cherry, dark plum and sweet spice on the nose, with a palate that's velvety, full-bodied and almost sinfully smooth. Rich without being heavy. Generous without being excessive. Serve with a slow-cooked ragu, aged cheese, grilled meat - this wine handles all of it effortlessly. It also handles a cosy night in with zero food and absolutely no justification required.
