Why do we love this wine?

This wine is enormous fun - light, bright, sappy, floral, confected, a little bunchy. There is complexity for days. The fruit weight is complete and satisfying and, while it remains light bodied (as pinot classically and varietally should) it feels complete and satisfying on the palate. There is bricky, savoury back palate nuance which puts a nice little bow on the mid-palate fruit, punctuating it and acting as a counterpoint to the pep of the acidity. It feels – and is – expertly crafted at every step.

Frequently Asked Questions

This Eminence Novella showcases Pinot Noir's classic light-bodied elegance, which allows the delicate raspberry and sour cherry flavours to shine without being overwhelmed by tannins. Unlike fuller-bodied reds that can mask subtle nuances, this wine's lighter weight reveals complex floral and savoury notes that would be lost in a heavier style. The bright acidity and complete fruit weight demonstrate how properly made Pinot Noir achieves satisfaction through finesse rather than power.

The yoghurt notes in this Pinot Noir likely come from malolactic fermentation, a secondary fermentation process that converts sharp malic acid into softer lactic acid. This process is common in premium Pinot Noir production and creates creamy, dairy-like characteristics that add complexity and mouthfeel. Combined with the wine's natural acidity and fruit flavours, these yoghurt notes contribute to the wine's described 'complete and satisfying' palate despite its light body.

The bricky, savoury back palate refers to earthy, mineral-driven flavours that appear as you swallow the wine, typical of well-made Pinot Noir from quality regions. These characteristics often develop from vineyard terroir and careful winemaking, creating a counterpoint to the bright fruit flavours. This savoury finish acts like punctuation, providing structure and preventing the wine from being one-dimensional, which is a hallmark of expertly crafted Pinot Noir.

Whitlands represents the emerging cool-climate wine regions that are producing exceptional Pinot Noir in Australia. These newer or lesser-known regions often offer excellent value as they haven't yet achieved the premium pricing of established areas like Yarra Valley or Mornington Peninsula. The fact that this wine shows such complexity and expert craftsmanship suggests Whitlands has the ideal climate and terroir conditions that Pinot Noir demands to express its varietal character.

Serve this Pinot Noir slightly chilled at 14-16°C to enhance its bright, floral characteristics and maintain the wine's described 'pep of acidity'. The lighter body and complex flavour profile make it perfect for food pairing with dishes that won't overpower its delicate nature - think roasted chicken, salmon, or mushroom-based dishes. Decanting isn't necessary for this young 2023 vintage, but allowing it to breathe in the glass for 10-15 minutes will help the savoury complexity fully emerge.
