Why do we love this wine?

It’s 100% pinot noir (of course), grown on classic limestone soils mixed with marl and clay - basically the good stuff Pinot dreams about. In the winery, it’s treated with textbook care: a long, slow, traditional ferment in temperature-controlled stainless steel, starting with a cold soak to tease out colour and aroma. Plenty of hands-on pigeage and pump-overs for structure, then a gentle post-ferment maceration before heading to oak. And not just a quick pit stop either - this wine spends 8 to 16 months in barrel, with 40–50% new oak, completing malolactic fermentation along the way. Translation: Serious depth, polish and complexity without losing that pinot finesse.
