McLaren Vale cabernet can only be described as decadent. McLaren Vale cabernet after 9 years in the cellar can only be described as nothing short of indulgent. Powerful, plush, lush and smooth as silk - we can't get enough of this beauty.

Don't worry, try one of these

Why do we love this wine?

Plush, rich blackberries and plums with a raspberry like acidity and wonderfully soft tannins. There's a good lick of oak but nothing distracting, a hint of eucalypt but it stops short of menthol. This wine's time in the cellar has done it absolute wonders - soft, smooth, silky, yet powerful, plush and ripe. A great wine from one of McLaren Vale's greats.

Frequently Asked Questions

The 2016 vintage has been recognised as a 'Killer Vintage' with exceptional aging potential. After several years in the cellar, this wine has developed remarkable complexity, with the tannins softening beautifully while maintaining the wine's powerful structure. The extended cellaring has allowed the fruit flavours to integrate seamlessly with the oak, creating a silky texture that showcases why 2016 was such an outstanding year for McLaren Vale reds.

McLaren Vale's Mediterranean climate and diverse soils create ideal conditions for Cabernet blends, producing wines with intense fruit concentration and natural balance. The region's proximity to the ocean moderates temperatures, allowing for extended ripening periods that develop complex flavours while retaining natural acidity. This terroir contributes to the wine's distinctive eucalyptus notes and the rich, plush fruit character that McLaren Vale Cabernet blends are renowned for worldwide.

This rich, full-bodied Cabernet blend pairs excellently with robust dishes that can match its intensity and complement its blackberry and plum flavours. Think grilled ribeye steak, slow-braised lamb shanks, or aged hard cheeses like vintage cheddar. The wine's soft tannins and balanced acidity also make it suitable for Mediterranean dishes with herbs that echo the subtle eucalyptus notes, such as rosemary-crusted beef or herb-marinated grilled vegetables.

Serve this wine at 16-18°C to showcase its complex aromatics and smooth texture - slightly cooler than room temperature brings out the best balance. Decant for 30-60 minutes before serving to allow the wine to breathe and fully express its developed character. If storing additional bottles, keep them in a cool, dark place at consistent temperature, as this wine has already demonstrated excellent aging potential and could continue to develop gracefully for several more years.

A 'Winemaker's Selection' designation typically represents the finest parcels of fruit from the vintage, often from the producer's best vineyard blocks or most successful fermentation lots. Di Fabio, recognised as an 'Iconic Winery', would reserve this label for wines that exemplify their house style and demonstrate exceptional quality. This suggests careful vineyard selection, optimal harvest timing, and meticulous winemaking techniques were employed to create a wine worthy of the winemaker's personal endorsement.
