Wow, what a wine. A must-have for any McLaren Vale die-hards or pretty much anyone with a mouth and a heart. Rich dark fruit, chocolatey oak and fine-grained tannins. A classic Aussie style with 8+ years under the belt, primed and raring to go.

Why do we love this wine?

Di Fabio Estate are a real wine-producer's producer. With a history in Australia dating back to the mid 60's, and much much longer in Italy, the Di Fabio family earned their stripes selling grapes to some of McLaren Vale's biggest names. As the years went by and whispers of their fruit's fantastic quality grew louder, they transitioned into full wine production and when we taste this gorgeous drop, we're so happy that they did. With premium fruit from old bush-vines in the Blewitt Springs sub-region, and a little bit of generational know-how, Di Fabio has crafted the ultimate people-pleaser. A dense, dark fruited wine that, although full-bodied, doesn't feel sluggish or clunky on the palate. Lively and rich blackberries and dark cherries are balanced by milk chocolate and sweet spice, a result of a very comprehensive oak treatment regime. This is a wine that was drinking beautifully five years ago, drinks beautifully today and will still be drinking beautifully in five years time. If you're a McLaren Vale fan, do yourself a favour.

I tasted this wine alongside its 2016 equivalent (both $80) and of the two, this is the fuller and richer wine. Indeed it’s a better wine all around. It’s a full-bodied shiraz with blackberry, sweet plum, milk chocolate and various dried herbs characters washing confidently through the palate. It shows some leathery/dusty development – it’s nearly seven years old, after all – but the fruit is still robust and in control. The other distinguishing feature about this wine is its tannin; it’s well balanced in general but there’s quite bit of pucker to this wine, which help lend it an air of seriousness. This wine will drink well for at least the next handful of years.

Frequently Asked Questions

This Shiraz comes from old bush-vines in the prestigious Blewitt Springs sub-region, which produces fruit with exceptional concentration and complexity. The Di Fabio family's generational expertise, combined with their transition from premium grape suppliers to winemakers, brings a unique perspective that focuses on showcasing the terroir rather than overpowering it. The comprehensive oak treatment regime creates a wine that's full-bodied yet maintains elegance and drinkability.

This wine demonstrates exceptional aging potential, having already shown beautiful drinking qualities for five years and projected to continue for at least another five years. The museum release designation indicates it's been carefully aged before release, while the old vine fruit provides the structural backbone necessary for extended cellaring. The balanced tannin structure and comprehensive oak treatment suggest it will develop additional complexity with proper storage.

The rich blackberry and dark cherry flavours, combined with milk chocolate and sweet spice notes, make this wine perfect for robust dishes like grilled lamb, aged beef steaks, or game meats. The cedar and liquorice characteristics complement dishes with herbs like rosemary or thyme, while the plum notes pair beautifully with rich, slow-cooked stews or barbecued meats with smoky flavours.

The 96-point rating reflects the wine's exceptional balance between power and elegance - a hallmark of premium McLaren Vale Shiraz. The old bush-vine fruit from Blewitt Springs provides intense concentration without heaviness, while the Di Fabio family's meticulous winemaking creates layers of complexity. The wine's ability to drink beautifully across multiple decades, combined with its rich yet refined character, demonstrates the quality that critics recognise in top-tier Australian Shiraz.

Bush-vines are old, ungrafted vines trained without trellising systems, typically over 35 years old, that produce smaller yields of intensely concentrated fruit. These vines develop deep root systems that access unique mineral profiles in the soil, contributing to the wine's complexity and distinctive terroir expression. The lower yields from bush-vines mean each grape carries more concentrated flavours, resulting in wines with greater depth, structure, and aging potential than those from younger, higher-yielding vines.
