The Elpidios showcases five different grape varieties - grenache, syrah, carignan, cinsault and pinotage - sourced from old dry-farmed bush vines in Swartland. This multi-varietal approach creates extraordinary complexity, as each grape contributes distinct characteristics that interweave to form layers of flavour. Minimal intervention means David & Nadia allowed the exceptional fruit quality from their old vines to shine without heavy-handed winemaking techniques.
