Why do we love this wine?

We are truly blessed to have this wine in our shed. It’s from a tiny production, family-owned independent producer in Swartland, South Africa. These wines generally just don’t make it all the way to Australia. David & Nadia spent ten years preparing their old dry-farmed bush vines to be ready to produce a wine of this calibre, letting the vineyard do the talking by acting with minimal intervention in the winery. There’s grenache, syrah, carignan, cinsault and pinotage in the blend, all laid to rest in oak for a year. The wine is so complex, so layered and so compelling. Enjoy it while you can since something like this doesn’t come around very often.

Part of our Women in Wine Collection

We are committed to ALWAYS having wines available that are made by women. In an industry that’s still dominated by men, we believe in celebrating the incredible work women are doing. Here’s to our Women in Wine!

Winemakers: Nadia & David, Nadia is a qualified soil scientist and viticulturist, she makes these wines with her husband, David.

Frequently Asked Questions

This Elpidios represents a decade of meticulous vineyard preparation, with David & Nadia nurturing old dry-farmed bush vines in Swartland to achieve optimal fruit quality. The five-grape blend of grenache, syrah, carignan, cinsault and pinotage creates extraordinary complexity that's rarely seen in single varietals. These tiny-production wines typically never reach Australian shores, making this offering genuinely exceptional for local wine lovers.

Swartland's Mediterranean climate and ancient granite soils provide ideal conditions for old bush vines to develop intense, concentrated flavours. The region's dry-farming techniques, where vines aren't irrigated, force roots deep into the earth, creating the minerally backbone evident in this wine. This terroir-driven approach, combined with minimal winery intervention, allows the vineyard's unique personality to shine through in every glass.

The wine's medium body and savoury profile make it perfect for grilled lamb with herbs, where the allspice notes complement rosemary and thyme beautifully. The black cherry fruit and minerally finish also pair excellently with aged cheeses, charcuterie, or slow-cooked beef dishes. The textured mouthfeel can handle rich, umami-driven foods like mushroom risotto or roasted vegetables with balsamic reduction.

Nadia, a qualified soil scientist and viticulturist, co-creates these wines with her husband David, bringing scientific expertise to their winemaking philosophy. Her background in soil science directly influences their terroir-focused approach and minimal intervention techniques. Supporting women winemakers like Nadia helps diversify an industry traditionally dominated by men, while showcasing the unique perspectives and expertise women bring to viticulture.

Serve this wine at cellar temperature (16-18°C) to showcase its complex aromatics and textured mouthfeel properly. While delicious now, the 2019 vintage has the structure and tannin backbone to develop beautifully over the next 5-8 years, with the oak integration becoming more seamless. Decant for 30-60 minutes before serving to allow the five-grape blend to open up and reveal its full complexity.
