Don't worry, try one of these

Why do we love this wine?

Richer than your average CDR (that’s industry-speak for Côtes du Rhône, just so you’re up with the lingo), this has all the black fruits and spices, plus a bunch of flowers and a delicate salinity. Soft tannins and well-judged balance speak of this winery, one that has had a reputation for its wines dating back to the 17th century. Their CDR reveals its secrets as gently but as assuredly as the winery itself. You need to go down a mottled, tree-lined alley amid the vineyard rows, where you’ll find the impressive Château sitting proudly- almost intimidatingly so - over the scenic landscape. Despite the fortified appearance, there’s an open invitation to travellers and tasters, and the elegant, generous wines within.

Frequently Asked Questions

GSM stands for Grenache, Syrah, and Mourvèdre - the holy trinity of Southern Rhône blending. This combination creates the wine's signature full-bodied character, with Grenache providing the blackberry fruit and warmth, Syrah adding spice and structure, and Mourvèdre contributing the minerally backbone and floral potpourri notes. The blend allows Château Signac to craft a wine that's both powerful and elegant, showcasing why this trio has been the foundation of great Rhône wines for centuries.

The name 'Combe d'Enfer' translates to 'Valley of Hell', hinting at the intense, sun-baked conditions that concentrate flavours in the grapes. This specific terroir contributes to the wine's distinctive salinity and mineral complexity, which elevates it beyond typical Côtes du Rhône. The challenging vineyard conditions force the vines to dig deep, creating wines with greater depth and the textured, savoury profile that makes this bottling special.

While standard Côtes du Rhône can be simple and fruity, this Villages-level wine benefits from stricter regulations and superior vineyard sites. The full-bodied palate weight and complex flavour profile - combining black fruits with floral potpourri and mineral notes - demonstrates the quality leap between basic CDR and Villages appellations. Château Signac's 400-year winemaking heritage also means they know how to extract maximum character from their premium fruit.

The wine's full-bodied structure and savoury character make it ideal for rich, flavourful dishes that can match its intensity. Think slow-braised lamb with herbs de Provence, grilled portobello mushrooms, or aged hard cheeses where the wine's minerally backbone can shine. The soft tannins and balanced acidity also make it versatile enough for charcuterie boards or roasted vegetables, while the blackberry fruit provides enough richness for heartier fare.

Serve this wine at cellar temperature (16-18°C) to showcase its complex aromatics and full-bodied structure without overwhelming the palate. The 2020 vintage is drinking beautifully now, offering immediate pleasure with its soft tannins and integrated flavours. However, the quality of Château Signac's winemaking and the wine's balanced structure suggest it will continue to develop gracefully for another 3-5 years, allowing the savoury elements to become even more pronounced.
