Why do we love this wine?

All of their reds see a little bottle age, and we’re looking at 2.5 years for this stunner before release. That comes after a good 18 months in premium French oak barrels. You do the math, Mofo. It’s rich and intense, with a glut of sophistication. Toasty spices and a touch of anise meet the menthol, blackcurrant core of this beauty. There’s a little touch of tobacco and earth which are starting to reveal themselves, promising a long and interesting life ahead. Superbly bold, a perfect reminder of Coonawarra’s charming force.

Frequently Asked Questions

This wine undergoes an extended maturation process of 18 months in premium French oak barrels followed by 2.5 years of bottle ageing before release. This lengthy process allows the tannins to soften and integrate, while the French oak imparts subtle vanilla and spice notes that complement the wine's natural blackcurrant intensity. The extended bottle ageing develops tertiary flavours like tobacco and earth, creating the sophisticated complexity that Coonawarra Cabernet Sauvignon is renowned for.

Coonawarra's famous terra rossa soil - a thin layer of red clay over limestone - provides exceptional drainage while retaining moisture, creating perfect conditions for Cabernet Sauvignon. The region's cool climate allows for slow, even ripening, preserving the variety's characteristic menthol and eucalyptus notes while developing intense blackcurrant flavours. This unique terroir combination produces Cabernet Sauvignon with both power and elegance, explaining why this wine shows such remarkable sophistication and ageing potential.

With scores of 96 points from Wine Orbit and 95 points from Wine Pilot, this Cabernet Sauvignon sits in the 'outstanding' category reserved for exceptional wines. These professional ratings, combined with recognition as both a single vineyard wine and from an iconic producer, indicate this is a benchmark example of Australian Cabernet Sauvignon. Such high scores typically reflect wines with perfect balance, complexity, and significant ageing potential that will continue developing for years to come.

This wine's rich, full-bodied structure and complex flavour profile make it ideal for robust dishes that can match its intensity. The blackcurrant core and emerging tobacco notes pair beautifully with grilled red meats, particularly lamb with rosemary or aged beef steaks. The French oak influence and vanilla undertones complement dishes with earthy elements like mushroom risotto or game meats, while the wine's tannin structure cuts through rich, fatty foods like aged cheeses or duck confit.

Given the wine's premium French oak treatment, extended bottle ageing before release, and the emerging tertiary characters like tobacco and earth, this Cabernet Sauvignon has excellent cellaring potential. Quality Coonawarra Cabernet Sauvignon from iconic producers typically peaks between 8-15 years from vintage, meaning this 2021 could develop beautifully until the mid-2030s. The wine's full-bodied structure and high-quality ratings suggest it will continue evolving, developing more complex savoury notes while maintaining its core fruit intensity.
