Why do we love this wine?

All of their reds see a little bottle age, and we’re looking at 2.5 years for this stunner before release. That comes after a good 18 months in premium French oak barrels. You do the math, Mofo. It’s rich and intense, with a glut of sophistication. Toasty spices and a touch of anise meet the menthol, blackcurrant core of this beauty. There’s a little touch of tobacco and earth which are starting to reveal themselves, promising a long and interesting life ahead. Superbly bold, a perfect reminder of Coonawarra’s charming force.

Frequently Asked Questions

This wine undergoes an extensive maturation process - 18 months in premium French oak barrels followed by 2.5 years of bottle ageing before release. This extended ageing allows the tannins to soften and integrate, while developing complex secondary flavours like tobacco and earth that are just beginning to emerge. The result is a wine that's already drinking beautifully but has the structure to continue evolving for years to come.

Coonawarra's famous terra rossa soil - a thin layer of red clay over limestone - provides perfect drainage while retaining enough moisture for the vines. The cool maritime climate allows for slow, even ripening, preserving the variety's signature blackcurrant intensity while developing complex herbal notes like menthol. This unique terroir combination is why Coonawarra Cabernet Sauvignon is often compared to the great wines of Bordeaux.

The 18 months in premium French oak imparts the toasty spices and vanilla notes, while also providing gentle tannin structure. The subsequent 2.5 years of bottle ageing allows these oak flavours to marry with the fruit, creating seamless integration. During bottle ageing, the wine develops tertiary characteristics like tobacco and earth, while the primary blackcurrant fruit evolves into more complex, nuanced flavours.

The wine's rich intensity and structured tannins make it perfect for robust red meats - think grilled ribeye, lamb shanks, or aged beef. The emerging tobacco and earthy notes pair beautifully with game meats like venison or duck. The toasty oak and dark chocolate undertones also complement hard aged cheeses, while the wine's sophistication makes it ideal for special occasion dining.

These exceptional scores place this wine in the top tier of Australian Cabernet Sauvignon, competing with wines often costing significantly more. The 96 points from Wine Orbit and 95 from Wine Pilot reflect the wine's perfect balance of power and elegance. Such high ratings for a 2021 vintage indicate exceptional winemaking and ideal growing conditions, suggesting this wine will age gracefully and potentially improve further over the next decade.
