Why do we love this wine?

It is quite a joyful moment when we get our hands on aged cabernet, from a top producer in the world-famous Coonawarra region. What better wine to show with some age than a cabernet, after all? Vibrant blackcurrant and oak have come together, tannins mellowed and earthy, secondary elements emerged. Unless you have a cellar full of aged wine, this is possibly the best chance to pick up some absolutely stunning aged cab for a stupidly good price.

Frequently Asked Questions

At seven years old, this Cabernet has reached that sweet spot where primary fruit flavours have evolved into complex secondary characteristics. The tannins have softened considerably from their youthful grip, while earthy, cedar notes have developed alongside the original blackcurrant core. This maturation process is particularly rewarding with Cabernet Sauvignon, as the variety's robust structure allows it to age gracefully and develop nuanced complexity that simply cannot be found in younger wines.

Coonawarra's famous terra rossa soil - a thin strip of red earth over limestone - creates ideal conditions for Cabernet Sauvignon that few regions can match. This unique terroir imparts distinctive eucalyptus and mint characteristics while maintaining excellent fruit concentration and natural acidity. The cool climate ensures slow, even ripening, resulting in wines with exceptional structure and longevity that have earned Coonawarra recognition as Australia's premier Cabernet region alongside Bordeaux's greatest appellations.

Serve this wine at 16-18°C to showcase its complex aromatics and balanced tannin structure - slightly cooler than room temperature but warmer than typical cellar temperature. Decant for 30-60 minutes before serving to allow the wine to breathe and fully express its cedar, mulberry, and eucalyptus characteristics. The wine's full body and 95-point rating suggest it will pair beautifully with rich dishes like aged beef, lamb, or strong cheeses that can match its intensity.

A 95-point rating from Wine Orbit places this wine in the 'outstanding' category, indicating exceptional quality that represents the top tier of Australian wine production. This score suggests the wine displays perfect balance, complexity, and regional typicity that critics expect from premium Coonawarra Cabernet. Combined with recognition as an 'Iconic Winery' product, this rating validates both the producer's reputation and this particular vintage's excellence, making it a standout example of aged Australian Cabernet at an accessible price point.

While this 2017 Cabernet is drinking beautifully now with its mellowed tannins and developed secondary characteristics, quality Coonawarra Cabernet can continue evolving for another 5-10 years under proper storage conditions. The wine's full-bodied structure and high-quality rating suggest it has the backbone to age further, potentially developing even more complex tertiary flavours. However, given its current perfect drinking window and the rarity of finding aged wine at this price point, there's no wrong choice between enjoying it now or cellaring some bottles for future enjoyment.
