Why do we love this wine?

22 months in 40% new French oak is nothing to shake your head at. That means a couple of things. It means this is a serious wine, it means the wine has concentrated fruit, it means the wine has gorgeous natural acid and it means that this wine was constructed to live long in the cellar for anyone with the patience. Juicy blackcurrant and blackberry flavours, velvety tannins and remarkable oak notes of pencil shavings, spice and vanilla. The acid and tannin in this wine are pure and enduring, this is by no means finished ageing. If we're honest, we're going to drink it now, we've been eyeing this one for a few years and have lost our patience, we very highly recommend that you test yours.

Frequently Asked Questions

Extended oak ageing like this indicates serious winemaking intent and concentrated fruit capable of handling such treatment. The 40% new French oak ratio strikes an ideal balance - enough new oak to impart complexity without overwhelming the fruit character. This extended maturation develops the wine's structure and allows tannins to integrate beautifully, creating the pencil shaving and spice notes that are hallmarks of premium Eden Valley Cabernet.

With its pure acid backbone and enduring tannin structure, this wine is built for long-term cellaring and hasn't reached its peak yet. Eden Valley's cool climate naturally preserves acidity, while the extended oak treatment has given it the framework to evolve gracefully. Premium Cabernet Sauvignons from this region typically develop beautifully over 10-15 years, with the fruit concentration and oak integration suggesting this bottle could reward patience well into the 2030s.

Eden Valley's elevated altitude and cool climate create perfect conditions for slow, even ripening that preserves natural acidity while developing intense fruit concentration. The region's ancient soils and temperature variations between day and night help Cabernet Sauvignon retain its characteristic structure and develop complex flavour profiles. This terroir naturally produces wines with the backbone needed for extended oak ageing and long-term cellaring potential.

The wine's velvety tannins and rich blackcurrant flavours make it perfect for red meat dishes that can match its intensity. The earthy undertones and dark chocolate notes complement grilled lamb, aged beef, or game meats beautifully. The oak-derived spice elements also pair wonderfully with herb-crusted roasts or dishes featuring rosemary and thyme, while the wine's structure can handle rich, sauce-based preparations.

Absolutely - decanting will significantly enhance your experience with this structured Cabernet. The wine's concentrated tannins and oak integration benefit from aeration to open up the blackberry and vanilla complexity. Given its youth and cellar-worthy structure, allow at least an hour of breathing time to soften the tannins and reveal the full spectrum of pencil shaving and spice notes that make this Eden Valley expression so distinctive.
