Why do we love this wine?

22 months in 40% new French oak is nothing to shake your head at. That means a couple of things. It means this is a serious wine, it means the wine has concentrated fruit, it means the wine has gorgeous natural acid and it means that this wine was constructed to live long in the cellar for anyone with the patience. Juicy blackcurrant and blackberry flavours, velvety tannins and remarkable oak notes of pencil shavings, spice and vanilla. The acid and tannin in this wine are pure and enduring, this is by no means finished ageing. If we're honest, we're going to drink it now, we've been eyeing this one for a few years and have lost our patience, we very highly recommend that you test yours.

The 40% new French oak approach is a sophisticated winemaking technique that balances oak influence with fruit expression. Using only partial new oak prevents the wine from becoming over-oaked while still imparting those desirable pencil shaving, spice and vanilla notes. The remaining 60% aged oak allows the concentrated Eden Valley fruit to shine through, creating a more harmonious and complex final wine that can age gracefully for years.

Eden Valley's high altitude and cool climate create perfect conditions for Cabernet Sauvignon to develop intense concentration while retaining natural acidity. The region's ancient soils and significant diurnal temperature variation allow the grapes to ripen slowly, building complex flavours whilst preserving the pure acid and enduring tannin structure evident in this wine. This terroir produces Cabernets with remarkable longevity and distinctive regional character.

This wine is built for extended cellaring with its concentrated fruit, pure acid structure and enduring tannins from 22 months oak maturation. While drinking beautifully now with decanting, it will continue developing complexity for another 8-12 years, potentially reaching peak drinking around 2027-2030. The velvety tannins will soften further, and the blackcurrant and blackberry flavours will integrate more seamlessly with the oak-derived spice and vanilla notes.

The wine's rich blackberry and dark chocolate notes, combined with earthy undertones and robust tannin structure, make it perfect for red meat dishes. Try it with grilled ribeye, slow-braised lamb shanks, or aged hard cheeses like vintage cheddar. The oak-derived spice notes also complement dishes with herbs like rosemary or thyme, while the wine's natural acidity cuts through rich, fatty foods beautifully.
