Elegance exemplified. Silky, round, mature and (still) lively. If you've had an aged Margs cab before, you know what you're in for, wowee. We don't know how we managed to get this one to be quite honest, but we're bloody glad that we did.

Why do we love this wine?

It's really difficult to get aged Margaret River cabernet. Why? Because everyone wants to get their mits on some of the best wines Australia has to offer. Normally there's a pretty hefty price tag attached too, that's where we come in. ALL the silky, oaky, dark fruited goodness for a fraction of the cost. True to regional tradition, this is a medium-to-full bodied wine with countless layers of complexity. Vibrant natural acid, charred French oak, bright red and black fruit and tobacco-like tertiary notes creeping in as the wine blossoms to full maturity. A great pick up.

Frequently Asked Questions

Margaret River Cabernet Sauvignon typically commands premium prices due to the region's exceptional reputation and limited production from boutique wineries. This 2016 vintage represents eight years of careful cellaring, allowing the wine to develop complex tertiary characters like tobacco and cigar box notes that only emerge with proper bottle age. The combination of a killer vintage, single vineyard sourcing, and boutique production normally makes these wines highly sought after and expensive in the retail market.

The 2016 vintage in Margaret River is recognised as a standout year that produced wines with exceptional balance and aging potential. Cool, consistent growing conditions allowed for extended hang time, resulting in Cabernet Sauvignon with intense fruit concentration while maintaining the vibrant natural acidity that gives this wine its structure. This vintage has now reached optimal drinking maturity, where primary fruit flavours have integrated beautifully with oak and developed those coveted tertiary characteristics.

These sophisticated tertiary flavours emerge through a complex chemical process during bottle aging, where tannins polymerise and fruit compounds evolve into more savoury, earthy notes. The interaction between the wine's natural compounds and the small amount of oxygen that enters through the cork creates these tobacco-like characteristics over 6-8 years. French oak aging contributes cedar and spice elements that further enhance these mature, contemplative flavours that distinguish well-aged Cabernet from younger expressions.

The wine's rich, full-bodied profile and complex flavour layers make it ideal for robust dishes that can match its intensity. Classic pairings include grilled red meats, aged hard cheeses, and dishes with earthy mushroom or truffle elements that complement the tobacco and cigar box notes. The vibrant acidity cuts through rich, fatty foods beautifully, while the dark chocolate and raspberry characteristics pair wonderfully with game meats or even dark chocolate desserts.

Single vineyard wines are sourced from one specific plot of land, allowing the unique characteristics of that particular site's soil, microclimate, and aspect to be fully expressed in the bottle. This approach typically results in more distinctive, terroir-driven wines compared to regional blends, as the winemaker can showcase the individual personality of that vineyard block. For Margaret River Cabernet, single vineyard bottlings often represent the producer's finest fruit and most careful winemaking, making them highly prized among collectors and enthusiasts.
