Why do we love this wine?

A cellar release with a lucky 9 years of evolution - give it a burl, and you’ll see that it is only starting to touch its prime drinking window. Usually exclusive to the wine producer’s database, this trickles out to us only when we are lucky, somehow our charming wine buyers have managed to get on that lucky list.

Boisterous tannins that have mellowed to a brooding, silky palate, with chunky fruit joined by herbaceous and somewhat meaty notes. There’s still classic cabernet cassis and blackberry, which is accompanied by rosemary, thyme and a long and savoury finish. Be quick, mofo - you too should be so lucky!

What is a Black Market deal?

Black Market deals are only made possible if we don’t reveal the maker’s brand on site. The wines are the genuine article – absolutely no cleanskins or fake brands, just dangerously good value. You won’t find out what it is until it hits your doorstep, but you won’t regret it. Just keep it on the down low.

Frequently Asked Questions

This wine has been carefully aged for 9 years, allowing its initially boisterous tannins to evolve into a silky, sophisticated texture. Cellar releases like this are typically held back by producers until they reach optimal drinking condition, which explains why it's usually exclusive to their database. The extended ageing has transformed the wine's character, developing complex herbaceous and meaty notes alongside the classic Cabernet fruit.

Coonawarra's famous terra rossa soil - a thin strip of red earth over limestone - provides exceptional drainage and mineral complexity that Cabernet Sauvignon thrives in. This unique terroir contributes to the wine's distinctive cassis and blackberry flavours while adding the herbaceous notes of rosemary and thyme mentioned in the tasting profile. The region's cool climate allows for slow ripening, developing the structured tannins that age so beautifully over time.

At 9 years old, this Cabernet is just entering its prime drinking window, evidenced by the transformation from harsh tannins to a silky, brooding palate. The integration of fruit, herb, and savoury elements indicates perfect maturity for current consumption. However, premium Coonawarra Cabernet can continue evolving for another 5-10 years, so you could cellar it longer if you prefer even more tertiary complexity.

The wine's savoury finish and herbaceous notes make it perfect for herb-crusted lamb or beef dishes, where the rosemary and thyme flavours will complement the seasoning. The silky tannins won't overpower medium-weight proteins like duck or venison, while the cassis and plum notes provide enough fruit to balance rich, umami-driven dishes. Aged hard cheeses will also highlight the wine's developed complexity.

A 96-point score from Wine Orbit represents exceptional quality, placing this wine in the top tier of Australian Cabernet Sauvignon. This rating, combined with the Five Stars designation, indicates the wine demonstrates outstanding varietal character, regional expression, and ageing potential. The consistent high ratings across multiple platforms (including 4.3 on Vivino) suggest this producer maintains exceptional standards year after year.
