Why do we love this wine?

A wine that gets the utmost attention at every stage of the winemaking process: the vineyard is hand-pruned, keeping yields low and flavours concentrated. Only hand-selected new French oak is used for ageing. And this has been resting in perfect conditions in the winery’s cellar for nearly a decade, bringing what was in it’s youth a massive, nearly explosive wine to the point of perfect drinking with mind-blowing complexity and length. If you’re after the finest that Coonawarra can achieve, then this is it right here.

What is a Black Market deal?

Black Market deals are only made possible if we don’t reveal the maker’s brand on site. The wines are the genuine article – absolutely no cleanskins or fake brands, just dangerously good value. You won’t find out what it is until it hits your doorstep, but you won’t regret it. Just keep it on the down low.

Frequently Asked Questions

After nearly a decade of careful cellaring, this wine has evolved from its youthful explosive character into perfect drinking condition. The extended ageing has allowed the tannins to soften and integrate beautifully with the fruit, while developing the complex secondary and tertiary flavours that only time can create. This transformation is particularly important for full-bodied Cabernet Sauvignon, which benefits enormously from extended cellaring to reach its peak potential.

Coonawarra's famous terra rossa soil over limestone creates perfect drainage while retaining enough moisture for the vines, resulting in concentrated flavours and excellent structure. The region's cool climate allows for slow, even ripening, preserving the herbaceous characteristics that give Coonawarra Cabernet its distinctive regional identity. This combination of soil and climate produces wines with exceptional ageing potential, as demonstrated by this 2014's remarkable development over nearly ten years.

Hand-pruning allows for precise vine management, ensuring only the best canes are retained for optimal fruit production. Combined with low yields, this forces the vine to concentrate its energy into fewer bunches, resulting in more intense flavours and better colour extraction. This labour-intensive approach is essential for premium winemaking, as it creates the foundation for the wine's exceptional concentration and complexity that has developed so beautifully over the past decade.

The hand-selected new French oak contributes subtle vanilla, spice, and toast notes while providing gentle tannin structure that complements the wine's natural fruit intensity. French oak is prized for its tight grain and elegant flavour integration, allowing the Cabernet's blackcurrant and herbaceous characteristics to shine through rather than being overwhelmed. After years of bottle ageing, these oak elements have married seamlessly with the fruit, creating the mind-blowing complexity mentioned in the tasting notes.

This full-bodied, complex wine pairs beautifully with rich red meats like aged beef, lamb, or game, where its developed tannins can stand up to the protein while its herbaceous notes complement earthy flavours. The wine's oaky characteristics make it excellent with grilled or roasted dishes, while its blackcurrant intensity works wonderfully with strong cheeses like aged cheddar or blue cheese. The decade of development has created enough complexity to also pair with sophisticated dishes featuring mushrooms, herbs, or rich sauces.
