The fruit, acid and tannin in this wine are pure and enduring, this is drinking unbelievably right now, and will go for much longer. If we're honest, we're going to drink it now, we've been eyeing this one for a few years and have lost our patience, we very highly recommend that you have a go at yours. It's game-changing.

Why do we love this wine?

Low-yielding, high quality vineyards are what this iconic producer are all about. This is must have been a beast in its youth because an aged wine, we're blown away but the concentration and power of the fruit. A distinctly varietal nose with blackberry, cassis, pencil shavings and mint. The palate shows us the value of bottle-ageing premium cabernet; leather, tobacco, french oak and spice take the lead whilst velvet-like tannins and subtle natural acid build a lengthy, satisfying finish. To put it simply, tasty, textured and downright tremendous.

Frequently Asked Questions

At 14 years of age, this Cabernet has reached that sweet spot where primary fruit flavours have evolved into complex secondary and tertiary characteristics. The transformation from youthful blackberry and cassis to sophisticated leather, tobacco and spice notes demonstrates why premium Cabernet Sauvignon from quality producers like Hutton Vale Farm can age gracefully for decades. Museum releases represent wines that have been carefully cellared and are now drinking at their peak maturity.

Eden Valley's high altitude and cool climate create the perfect conditions for Cabernet Sauvignon to develop the structural backbone needed for long-term ageing. The region's diurnal temperature variation helps retain natural acidity while allowing full flavour development, which is evident in this wine's ability to maintain freshness after 14 years. The cooler conditions also contribute to the distinctive mint and eucalyptus characters often found in Eden Valley Cabernets.

The 'velvet-like tannins' described here showcase how time transforms the initially firm, sometimes aggressive tannins of young Cabernet into something silky and integrated. This polymerisation process occurs over years in bottle, where tannin molecules bind together and soften, creating a smoother mouthfeel while still providing structure. It's this evolution that makes aged premium Cabernet so sought after by collectors and connoisseurs.

The wine's developed leather and tobacco notes, combined with its full body and integrated tannins, make it perfect for rich, slow-cooked dishes like braised beef short ribs or lamb shanks. The earthy characteristics and spice elements also complement aged cheeses, particularly hard varieties like aged cheddar or Parmigiano-Reggiano. The wine's maturity means it can handle bold flavours without being overwhelmed.

Low yields concentrate flavours and create wines with greater intensity and ageing potential, which is clearly evident in this wine's remarkable concentration after 14 years. By limiting grape production per vine, Hutton Vale Farm ensures each berry develops maximum flavour compounds and tannin structure. This philosophy of quality over quantity is what separates iconic producers from commercial operations and explains why this wine has earned 95 points from James Halliday.
