Don't worry, try one of these

Why do we love this wine?

Gee whiz, this wine has aged like, well, like a fine wine. A distinctly regional and varietal example of what Margaret River does best, good old cab sav. Soft, lingering tannin, cassis, leather, blackberries, and smooth, chocolatey oak has all been softened and integrated over time to create this harmonious wine with elegance, power and the capacity to age even longer, if you're really into that sort of thing. The kind of wine that invokes a strong need to simply sit and sip. Well, sip away, Mofo, we don't get the opportunity to try wines of this quality very often.

Frequently Asked Questions

At 16 years of age, this wine has reached that magical stage where all the components have married beautifully together. The tannins have softened from their youthful grip, the oak has integrated seamlessly, and complex tertiary flavours like leather have developed alongside the primary fruit characters. Museum releases represent wines that have been cellared to their optimal drinking window, offering a rare glimpse into how premium Margaret River Cabernet Sauvignon evolves with proper ageing.

Margaret River's maritime climate provides the perfect balance of warm days and cool nights that Cabernet Sauvignon craves. The region's gravelly soils offer excellent drainage while retaining enough moisture for the vines, and the consistent sea breezes help maintain acidity and prevent over-ripening. This creates the ideal conditions for producing Cabernet with both power and elegance - exactly what you'll find in this bottle where the regional character shines through the cassis and blackberry notes.

Decant this wine 30-60 minutes before serving to allow it to breathe and fully express its complex aromatics. Serve at cellar temperature (16-18°C) in large Bordeaux glasses to concentrate the bouquet. The wine's full-bodied nature and integrated tannins make it perfect for slow sipping and contemplation, allowing you to appreciate how the leather, cedar, and chocolate notes have developed over its 16-year journey.

The wine's evolved tannin structure and complex flavour profile make it ideal for rich, savoury dishes that won't overpower its elegance. Think slow-cooked lamb with rosemary, aged beef with mushrooms, or mature hard cheeses like aged cheddar or Parmigiano-Reggiano. The leather and cedar notes particularly complement game meats, while the lingering blackberry fruit provides a beautiful contrast to the umami richness of these proteins.

While this wine is drinking beautifully now with its harmonious integration, quality Margaret River Cabernet Sauvignon from 2008 can continue evolving for several more years under proper storage conditions. The description notes it has 'the capacity to age even longer', suggesting the structure is still sound. However, at 16 years old, it's entering its prime drinking window where the balance between fruit, tannin, and tertiary complexity is at its peak - making now an excellent time to enjoy it.
