Why do we love this wine?

24 months in 50% new French and American oak is nothing to shake your head at. That means a couple of things. It means this is a serious wine, it means the wine has concentrated fruit, it means the wine has gorgeous natural acid and it means that this wine was constructed to live long in the cellar of anyone with the patience. Juicy blackcurrant and blackberry flavours, velvety tannins and remarkable oak notes of pencil shavings, spice and vanilla. The acid and tannin in this wine are pure and enduring, this is by no means finished. If we're honest, we're going to drink it now, we've been eyeing this one for a few years and have lost our patience, we very highly recommend that you test yours.

Frequently Asked Questions

At nearly two decades old, this Eden Valley Cabernet has reached museum release status, meaning it's a mature vintage that showcases how premium Australian Cabernet Sauvignon develops over time. The 24 months in French and American oak has integrated beautifully with the fruit, creating complex tertiary flavours that only emerge with proper cellaring. Museum releases like this offer wine lovers a rare opportunity to experience how concentrated blackcurrant and blackberry flavours evolve into more nuanced, earthy expressions.

Eden Valley's high altitude and cool climate create the perfect conditions for Cabernet Sauvignon to develop the natural acidity and structured tannins essential for long-term ageing. The region's diurnal temperature variation allows grapes to ripen slowly while retaining freshness, resulting in wines with both power and elegance. This particular 2006 demonstrates Eden Valley's ability to produce Cabernet with the backbone to improve over 15+ years, developing those distinctive pencil shaving and spice notes that define premium aged reds.

The 24-month maturation in 50% new French and American oak barrels creates a sophisticated flavour layering that's now perfectly integrated after years of bottle age. French oak contributes the elegant pencil shaving notes and refined tannin structure, while American oak adds vanilla and spice complexity. After nearly two decades, these oak influences have melded seamlessly with the fruit, creating a harmonious balance where neither dominates - the hallmark of expertly crafted, age-worthy Cabernet.

This 2006 Cabernet is at a fascinating drinking window where it offers immediate pleasure while still having potential for further development. The velvety tannins and integrated oak suggest it's reached beautiful maturity, yet the wine's pure acid structure and enduring tannins indicate it could continue evolving for several more years. For those who appreciate the complex interplay of mature fruit, integrated oak, and developed earthiness, now is an excellent time to enjoy this wine's current expression.

This wine's full-bodied structure and complex flavour profile of blackcurrant, dark chocolate, and earthy notes make it ideal for rich, protein-heavy dishes. The mature tannins and integrated oak work beautifully with aged beef, lamb shanks, or game meats, while the wine's natural acidity cuts through rich sauces and gravies. The earthy undertones that have developed over time also pair excellently with mushroom-based dishes or aged hard cheeses, creating complementary flavour bridges that enhance both the wine and food.
