The eighth vintage of this Mofo fave wine returns, with a bang. Perhaps one of the best, this incredibly popular GSM blend is a must-have.

Why do we love this wine?

Bodegas Olivares are a family-run winery in the sunny region of Jumilla in the south-east of Spain that we’re always proud to work with. We’ve always received some of our best value wines from them, vintage after vintage. This is a rework of the popular GSM, with the local monastrell (or ‘mataro’ to Aussies) taking the lead role to make an MGS. The wine has sun-drenched summer fruit with a fresh, breezy acidity from the high altitude in which it’s grown. With sweet, swarthy berries and an exotically spiced finish, we can attest that it’s bloody hard to turn down a second (or third) glass.

Frequently Asked Questions

This wine flips the classic GSM (Grenache, Syrah, Mourvedre) formula by making Monastrell the lead grape, creating an MGS blend instead. Monastrell, known as Mataro in Australia, brings more intense berry concentration and exotic spice than Grenache-led blends. The high-altitude vineyards in Jumilla add crucial freshness that balances the sun-drenched fruit intensity typical of this Mediterranean variety.

Jumilla's combination of intense Spanish sunshine and high altitude creates perfect conditions for concentrated yet balanced wines at accessible prices. The region's continental climate with hot days and cool nights allows grapes to develop full flavour while retaining natural acidity. Being less internationally recognised than Rioja or Ribera del Duero, Jumilla offers exceptional quality-to-price ratios from dedicated family producers like Bodegas Olivares.

The wine's cherry and redcurrant fruit with exotic spice makes it brilliant with Mediterranean cuisine, particularly Spanish tapas, grilled lamb, or chorizo-based dishes. The fresh acidity and medium body also complement tomato-based pasta sauces and aged cheeses beautifully. Its spiced finish pairs exceptionally well with Moroccan or Middle Eastern flavours, making it more versatile than many Spanish reds.

Old vines produce smaller yields of more concentrated grapes, which explains this wine's intense berry flavours and complex spiced finish. Mature Monastrell vines develop deeper root systems that access different soil layers, contributing to the wine's distinctive character and mineral complexity. The 90-point Old Vine rating recognises how these ancient plants create wines with greater depth and personality than younger vineyard plantings.

This 2021 is drinking beautifully now with its fresh, vibrant fruit and balanced acidity perfectly integrated. Medium-bodied Spanish reds like this typically peak within 3-5 years of vintage, so it will continue developing complexity through 2026. The wine's structure suggests it will maintain its charm for several more years, though the bright berry flavours are at their most expressive in its current youthful state.
