1x Pago Aylés Immortalis Albariño 2023

White — Albariño

Rias Baixas — Spain

From 40-45 year-old vines in the Condado de Tea subzone of Rías Baixas, this Albariño brings serious energy to the glass. The vineyard sits at 300m, on granitic and slate soils, with big swings between day and night temps - perfect conditions for fruit that’s both ripe and razor-sharp. Yields were low in this vintage, which means flavour concentration is dialled right up. This is Albariño made for seafood - oysters, prawns, grilled fish, you name it. Drink it now for its vibrant fruit and saline crunch, or let it evolve over the next few years if you like your whites with more depth

You'd pay $50 full price.

1x Barringwood Riesling 2022

White — Riesling

Tasmania — Australia

The palate is electric with citrus fruit, carried by razor-sharp acidity and rounded off with just a hint of phenolic texture for grip. This captures everything that defines Tasmania's cool-climate advantage - the purity, the finesse, the mineral-driven intensity that comes from pristine fruit grown in ideal conditions. It's elegantly structured and refreshingly dry, proving that Australian riesling can compete with the world's best when grown in the right place by the right hands. Dry, elegant and refreshingly pure, this is riesling that’s as classy as it is mouthwatering - perfect with fresh seafood, spicy Thai or simply chilled for a warm afternoon.

You'd pay $36 full price.

1x Wellington & Wolfe 'Wolfe at the Door' RCG White Blend 2023

White — White Blend

Tasmania — Australia

A field-blend of riesling, pinot gris and gewürztraminer all put together from northern Tassie's Tamar Valley and Pipers River - co-fermented with some time on skins and partially rested in seasoned oak to build texture. Bright, aromatic and delicious in that way that makes you wonder why more people don't just chuck different varieties together and see what happens. There's complexity here without any pretension, texture without too much weight, and aromatics that jump out of the glass in the best possible way. This is field blend magic – three varieties playing off each other, some skin contact adding grip and interest, a touch of oak giving it body. Pure drinking pleasure that's way more than the sum of its parts.

You'd pay $36 full price.

1x Wheeler Wines Electric Lines Chardonnay 2021

White — Chardonnay

Yarra Valley — Australia

The fruit gets a gentle press and wild ferment in old French barriques, followed by nine months resting on fine lees with a bit of bâtonnage. Some barrels go through malo, some don’t - but the balance is completely bang on. The nose is tight and chalky, with green apple, lemon peel and a hint of spice. On the palate, it's all flint, crunch and cream; white nectarine, savoury nuttiness, saline drive and a gently textural edge. It finishes long, dry and laced with minerality. Complex without being showy. Effortlessly classy. Drink it with seafood, a good cheese plate, or honestly, in your PJs on the couch. Your call.

You'd pay $35 full price.

Frequently Asked Questions

This curated pack showcases the incredible diversity of white wine expression, from the mineral-driven precision of Austrian-style Gruner Veltliner to the textural richness of barrel-fermented Chardonnay. Each variety represents a different winemaking philosophy and terroir expression, allowing you to experience how factors like climate, soil, and technique create vastly different flavour profiles. The inclusion of both European varieties like Albariño and Australian classics like Riesling demonstrates how global wine styles can thrive in different regions.

The collection spans the full spectrum of white wine expression, from the bright citrus and green apple notes of Riesling and Gruner Veltliner to the richer, creamier textures found in the Chardonnay with its toast and lanolin characteristics. The Fiano and Albariño bridge these extremes with their stone fruit and floral elements, while the white blend offers complexity through its multi-varietal composition. This range allows you to explore how different grape varieties naturally express acidity, texture, and aromatics.

The variety in this selection makes it incredibly versatile for food matching across different cuisines and seasons. The crisp, mineral-driven wines like Riesling and Gruner Veltliner excel with Asian flavours, seafood, and fresh salads, while the textural Chardonnay can handle richer dishes like roasted chicken or creamy pasta. The Albariño's natural affinity for shellfish and the Fiano's ability to complement Mediterranean flavours means you'll have the perfect wine for everything from casual weeknight dinners to special occasions.

This selection represents some of Australia's most exciting boutique producers who are pushing boundaries in white winemaking, evidenced by the Five Star Halliday ratings and outstanding critical acclaim. The focus on small batch production and sustainable farming practices reflects a commitment to quality over quantity, while the inclusion of old vine fruit adds depth and complexity that only comes from mature vineyard sites. These are cult producers and killer vintages that showcase why Australian white wines are gaining international recognition for their distinctive character.

Start with the lightest, most mineral-driven wines like the Riesling or Gruner Veltliner to calibrate your palate, then progress through increasing levels of texture and richness. Pay attention to how each variety expresses acidity differently - from the piercing freshness of Albariño to the more integrated acidity in barrel-fermented Chardonnay. Take notes on the diverse aromatic profiles, from the floral orange blossom notes to the more complex toast and almond characteristics, as this will help you understand your personal preferences and develop your palate for future wine selections.
