1x Pago Aylés Immortalis Albariño 2023
White — Albariño
Rias Baixas — Spain
From 40-45 year-old vines in the Condado de Tea subzone of Rías Baixas, this Albariño brings serious energy to the glass. The vineyard sits at 300m, on granitic and slate soils, with big swings between day and night temps - perfect conditions for fruit that’s both ripe and razor-sharp. Yields were low in this vintage, which means flavour concentration is dialled right up. This is Albariño made for seafood - oysters, prawns, grilled fish, you name it. Drink it now for its vibrant fruit and saline crunch, or let it evolve over the next few years if you like your whites with more depth
You’d pay $50 full price.

Tasting Notes
1x Barringwood Riesling 2022
White — Riesling
Tasmania — Australia
The palate is electric with citrus fruit, carried by razor-sharp acidity and rounded off with just a hint of phenolic texture for grip. This captures everything that defines Tasmania's cool-climate advantage - the purity, the finesse, the mineral-driven intensity that comes from pristine fruit grown in ideal conditions. It's elegantly structured and refreshingly dry, proving that Australian riesling can compete with the world's best when grown in the right place by the right hands. Dry, elegant and refreshingly pure, this is riesling that’s as classy as it is mouthwatering - perfect with fresh seafood, spicy Thai or simply chilled for a warm afternoon.
You’d pay $36 full price.

Tasting Notes
1x Wellington & Wolfe 'Wolfe at the Door' RCG White Blend 2023
White — White Blend
Tasmania — Australia
A field-blend of riesling, pinot gris and gewürztraminer all put together from northern Tassie's Tamar Valley and Pipers River - co-fermented with some time on skins and partially rested in seasoned oak to build texture. Bright, aromatic and delicious in that way that makes you wonder why more people don't just chuck different varieties together and see what happens. There's complexity here without any pretension, texture without too much weight, and aromatics that jump out of the glass in the best possible way. This is field blend magic – three varieties playing off each other, some skin contact adding grip and interest, a touch of oak giving it body. Pure drinking pleasure that's way more than the sum of its parts.
You’d pay $36 full price.

Tasting Notes
1x Wheeler Wines Electric Lines Chardonnay 2021
White — Chardonnay
Yarra Valley — Australia
The fruit gets a gentle press and wild ferment in old French barriques, followed by nine months resting on fine lees with a bit of bâtonnage. Some barrels go through malo, some don’t - but the balance is completely bang on. The nose is tight and chalky, with green apple, lemon peel and a hint of spice. On the palate, it's all flint, crunch and cream; white nectarine, savoury nuttiness, saline drive and a gently textural edge. It finishes long, dry and laced with minerality. Complex without being showy. Effortlessly classy. Drink it with seafood, a good cheese plate, or honestly, in your PJs on the couch. Your call.
You’d pay $35 full price.
