That fruit profile persists through a lingering finish, balanced by subtle oak and spritely acidity. Nearly ten years has done this wine wonders - mature and balanced but still packing a punch.

Geoff Merrill is a man of many talents. Lucky for us (and you), making absolutely phenomenal wines is one of them. Geoff creates his wines with an eye on the future, everything is held back and carefully tracked until it's in its optimum drinking window. This is what a wine in the optimum drinking window looks like. Full of oomph and bravado, this strapping back-vintage cab is not for the faint of heart. Packed with succulent, ripe berry fruits, charry and vanillin oak and leather – this is not one to pull the bat away from big, bold flavours. Marked by a toasty oak profile, there's a whack of tobacco, clove and freshly roasted coffee perfuming the nose and palate. This is quite the wine to impress.

When we have this producer at the tasting bench, you can be sure there's a few of us salivating over the wines. This cabernet is always an absolute standout, and we all nod in agreement that this has to be one of the best value cabernets we've ever sold. Ever. An extroverted red which refuses to back down, this wine is fragrant with dark forest fruits seducing the nose, while traces of mint and cedar oak add a twist of regional character. A torrent of ripe plum, dark berry and blackcurrant make their presence known on the palate -  clearly dominating but steering clear of overwhelming the tastebuds. The finish is superb with great length and a dry finale. An outstanding example of how to balance power with restraint, and succeed - this magnificent cab shows others how it’s done.

This wine will be drinking beautifully from right now until 2035 - to make a conservative estimate. Sourced from Parker Estate's renowned ‘Abbey’ vineyard in southern Coonawarra - where the unique microclimate delivers a longer ripening season and the world-famous terra rossa soils make their mark on every single grape. The result? A tighter tannin structure, deeper fruit concentration, and serious cellar-worthy swagger. That said, this wine is drinking wonderfully already, at such a young age, and those who like their wines with a bit of grunt will find happiness in its graceful austerity. Or, if you're one for cellaring, dig a whole in the backyard, set you're alarm for 2035 and forget about it. The magic of stelvin-sealed bottle development will take care of the rest.

This is a wine that encapsulates everything that we love about Australia’s most iconic cabernet region, Coonawarra. Deep, dark-fruited intensity, met with smooth, well-integrated oak and that eucalypty hint that we all know so well. This lot have created an absolute cracker here - no surprises, they do every year. From the exceptional 2021 vintage, this is full-bodied cabernet that lets the terroir do the talking. Produced by certified Coonawara royalty, it’s bursting with ripe blackcurrant, blueberry and boysenberry, but layered with distinctive mint and eucalypt that let you know exactly where this wine's from. Eighteen months in a mix of French and American oak (35% new) brings a lick of toasty vanilla, spice and richness to the palate, while fine, mature tannins and bright acidity keep it all perfectly in check. Open-top fermentation and mature vines have lent a softness and depth to the wine, making it immensely enjoyable now, with the structure to cellar confidently for 8-10 years. It’s bold, it’s balanced, to be honest, in our eyes, it's perfect.

Coonawarra's famous terra rossa soil - a thin strip of red earth over limestone - creates ideal drainage and mineral complexity that's virtually impossible to replicate elsewhere. This unique terroir, combined with the region's cool maritime climate, produces Cabernet Sauvignon with exceptional structure, intense blackcurrant flavours, and distinctive eucalyptus notes. The limestone subsoil contributes to the wine's natural acidity and age-worthiness, which is why Coonawarra Cabernets are considered among Australia's finest and most cellar-worthy reds.

These powerful Coonawarra Cabernets benefit from decanting 1-2 hours before serving to allow the tannins to soften and complex flavours to emerge. Serve at 16-18°C in large Bordeaux-style glasses to concentrate the aromatics. Store bottles on their side in a cool, dark place at 12-15°C with consistent temperature - many of these wines will continue developing beautifully for 10-15 years.
