We all know the expression about dangling a carrot in front of someone. But what if this entire case of wine is ‘carrots’ so to speak?

Why do we love this case?

We’re talking about Ulithorne after all, a star-studded McLaren Vale producer. All you can really do is dangle an even bigger carrot. So that’s what we did. You’ll get 11 bottles of their Familia shiraz, probably enough reason in itself to grab a case. But why stop there? We’ve added the ultimate carrot, a bottle of their Paternus shiraz, which is nothing short of a showstopper. All carrots, no sticks...that’s how we roll.

1x Ulithorne Paternus Shiraz 2018

Red — Shiraz

McLaren Vale — Australia

From the oldest vines on the estate vineyard comes this dark and deep Vale shiraz. Great drainage in the sand-over-clay soil sets the stage for excellent concentration of flavour, presenting as blackberry, cherry, plum and spice. Twenty months in a mix of new and seasoned French oak rounds out the package with fine-grained tannins and a subtle cedary influence on the back palate. This is classic Vale old vine shiraz, inky and smooth, deep and complex.

You'd pay $85 full price.

11x Ulithorne Familia Shiraz 2021

Red — Shiraz

McLaren Vale — Australia

McLaren Vale shiraz, yes, but lithe and vibrant. A more medium-bodied feel leaves room for the lively fruit flavours to sing, unshackled from big, beefy, old-school styles. Classic brambly goodness skates on a fresh sheet of acidity, with just enough grippy tannin to keep it grounded. Miraculously food-friendly, there’s all the ingredients here for an infamous dinner party red. The kind you and your mates are liable to enjoy a wee bit too much of an evening.

You'd pay $40 full price.

Frequently Asked Questions

The Paternus represents Ulithorne's flagship single-vineyard expression, crafted from their oldest vines and receiving extended barrel ageing compared to the Familia. While both showcase McLaren Vale's signature rich, spiced shiraz character, the Paternus offers greater complexity and cellar-worthy structure, earning it consistent 94-96 point ratings. Think of the Familia as your everyday luxury and the Paternus as the special occasion showstopper that demonstrates why Ulithorne holds five-star winery status.

Old vines naturally produce smaller yields with more concentrated flavours, which explains the intense blackcurrant, plum, and spice notes in these shiraz wines. The mature root systems access deeper soil layers, contributing to the complex mineral backbone that balances the rich fruit character. In McLaren Vale's Mediterranean climate, these established vines also show better drought tolerance, leading to more consistent vintage-to-vintage quality and the distinctive black olive and allspice complexity that defines premium Australian shiraz.

The rich, spiced profile and full-bodied structure make these wines perfect partners for robust dishes like slow-cooked lamb with rosemary, grilled ribeye with pepper sauce, or aged hard cheeses. The natural acidity cuts through rich, fatty meats while the spice notes complement herbs and bold seasonings. For something different, try them with dark chocolate desserts or spiced Middle Eastern dishes - the wine's complexity can handle intricate flavour combinations that would overwhelm lighter reds.

The 2018 Paternus has excellent cellaring potential of 15-20 years, thanks to its single-vineyard pedigree and full-bodied structure. Over time, the primary blackcurrant and plum flavours will evolve into more complex secondary notes like leather, tobacco, and earthy undertones, while the tannins soften and integrate. The spice elements will become more nuanced, developing into exotic spice and cedar notes. Peak drinking will likely be 2026-2035, though it's already showing beautifully now.

Ulithorne has earned five-star ratings from both James Halliday and Wine Orbit through their commitment to single-vineyard expressions and old-vine fruit sources. Their winemaking philosophy focuses on minimal intervention to showcase McLaren Vale's unique terroir, resulting in wines that consistently score 94+ points across multiple critics. The combination of premium vineyard sites, traditional techniques, and modern precision has positioned them among Australia's elite producers, with their Paternus range representing the pinnacle of McLaren Vale shiraz craftsmanship.
