Blanc de Blanc is just a fancy way of saying your sparkling wine is made purely from white grapes. And there's no better white grape for bubbles than chardonnay. Twin Valleys sourced chardonnay from a single vineyard in Moyhu, a gorgeous little spot in the King Valley that always delivers the goods. This is elegant and engaging, offering up green apple, jasmine and waves of citrus. But don't look past the mouthfeel, starting with a very fine bead and rolling into a creamy palate and lingering vibrancy from the citrusy acid.

Polish Hill proves, yet again, that it produces the most age-worthy riesling in the country (if not the world). The nose is alive with green apple, jasmine florals and zesty lime, with a flinty mineral edge that sets the tone. On the palate, it’s taut and vibrant – layers of kaffir lime, citrus rind and Granny Smith apple carried on a cool, slatey minerality. Clare Valley riesling, firing on all cylinders.

At just 9.7% alc, you could almost have this for breakfast (we’re not saying you should… but you could). Don’t be fooled though - there’s flavour for days in this glass. Fresh citrus, lime leaf, lemon curd, and that salty, sea-breeze vibe that basically screams “take me to the coast.” Please Mofo - drink between the flags. Piquepoul - or “PIQ” if you’re mates - is the Barossa’s answer to the South of France’s favourite oyster wine. Grown in red soils over limestone, it’s all about sunshine and sunburn, like a surf lifesaver in budgie smugglers, minus the whistle. Picked early to keep the acid snappy and the booze low, it’s fermented cool and pressed gentle - result: crisp, textural, stupidly refreshing deliciousness. On the palate, we're getting lemon curd, lime zest, a lick of minerality and a clean, salty finish that’ll have you reaching for another schluck (that’s Barossan for “decent gulp”) PIQ’s pure sunshine in a bottle. Load the esky, grab the oysters, round up your mates, and chuck the gaffer tape on the tennis ball, beach cricket just found a new necessity.

Sangiovese just makes good rosé, it's a fact. How can a wine so dry be so refreshing? A light bodied rosé built around flavours of fresh strawberries and raspberries with a soft mineral acidity and a crisp, mouthwatering finish. Not for lack of quality or passion, which comes in bucketloads here. Head inland to find this little gem of an area where the limestone and sandy soils cover the landscape: the beating heart of some outstanding value wines. Consider yourself warned, mofo: deals like this should not be taken for granted.
