Here, we bring you the best of the best. These are the wines that our producers have loved so dearly that they've kept a few behind at the cellar for their future selves (and, some lucky customers who might get the winemakers on a good day). This is Australia's foremost producer, and one of their foremost wines. Oh, and it's been cellared to absolute perfection. This is dark and brooding and quietly contemplative in the glass. A deep set crimson leading into a slightly faded mauve at the perimeter. Long, lasting, precious shiraz that (should you have the patience) will go on and go well.

Deep, dark ripe fruit dazzles to begin, but then the nuance of age makes itself known, adding another element to this fantastic wine. A swarm of brambly, developed fruit is framed by punchy tannin and well integrated acidity. Seven years cellar time has allowed some fruit leather and umami to enter the flavour profile, but they're only there as a suggestion of what this wine might do over the next decade - right now its all about the fruit - luscious and complex and packing a genuine, no-holds-barred bit of punch. Chocolate, tobacco, pepper, spice – everything nice. Personally I'm torn: I would love to see what this wine looks like in the back half of the 2030s, but I know I'll drink my modest allocation by the end of the month.

You say shiraz, our producer says syrah. The difference? A little elevation and a slower ripening season that results in a fresher wine out of the gate. Give that wine with all its structure and elegance a decade in bottle, and you have a whole other gem. From a single vineyard in the Eden Valley, this wine has stood the test of time with ease. Think chocolate ripple biscuits and blackcurrant fruit-rollups, all tied together in a remarkably savoury palate. You'll absolutely see the development from cellar time, in a very moreish way. We've taken almost every bottle that was ever made, so grab your chance while it's here.

From an absolute mofo fave, and leading South Aussie shiraz producer, comes a perfectly aged wine that offers bang-for-your-buck and then some. Ripe plum and blackberry fruit is beautifully integrated with supportive vanillan oak on the nose. The palate is plush and voluptuous - all juicy fruit and textured with gentle tannins and depth of flavour that adds plenty of length. Juicy South Aussie shiraz that is just hitting it straps.

This tiny producer knows quality tenfold. A hundred-fold. A thousand-fold. Seriously, this is unbelievably good. When people talk about quintessential Barossa shiraz, this is what they’re thinking about. Ripe, jubey plums mingle with cocoa and sweet vanilla amidst supple tannins. The kind of wine that coats your palate and sticks around like a good friend. We’d say to save this one for special occasions, but realistically this will make any occasion special.
