This was built to honour the climate and terroir of one of Australia's most-highly-rated shiraz regions – Wrattonbully. Be warned: This is not for the faint of heart... Specifically crafted to showcase the 'Cavelands' sub-region with its layers of Terra Rossa soils, limestone caves, pristine waters and maritime climate that makes this place so bloody special. Big, bold, full-bodied and loaded with dark fruits. This is an intense, fruit-driven beast with abundant juicy red fruit flavours and a rich, round palate that doesn't mess around. Lingering dark fruits, pepper spice and overt oak complete the picture, delivering a balanced and seriously impressive finish. Made for carnivores who like their reds powerful and their meals substantial. Any cut of meat you choose to throw at it – ribeye, lamb chops, slow-cooked beef – this shiraz will be its best mate.

This comes from what might just be the best Shiraz patch in the Yarra Valley - an extinct volcano, rare black basalt soils, and one of the highest, sunniest sites in the whole region. Odd combination on paper, but it's the whole reason this Shiraz shows up with power, drive, depth and ripeness that most cool-climate examples simply can't manage. Hand-picked, co-fermented with a touch of Viognier, plunged daily for a month, then matured in a mix of new and seasoned French oak. Blood plum, black cherry, star anise and tapenade, with a soft, pillowy tannin. Cool-climate site, warm-climate intensity. Shiraz lovers of all kinds will find something heart-warming here.

Adelaide Hills Shiraz doesn't get nearly enough credit. This one is a reminder of exactly why it should. Detailed enough for those who love the complex styles. Big and broad enough for rusted-on Barossa fans. Great stuff. Rich plum and boysenberry at the core, with chocolate and mocha woven through a palate that's soft, cushy and genuinely plush from start to finish. The kind of red that wraps around your palate in all the right ways without ever asking too much of you in return. Approachable right now. Actually, come to think about it, completely delicious right now. Sure, it'll age beautifully but we're opening ours the second we get home.
