1x Domaine Yvon & Laurent Vocoret 1er Cru Homme Mort Chablis 2023
White — Chardonnay
Chablis AOC — France
L'Homme Mort is one of the most northerly Premier Crus in Chablis, located within the larger Fourchaume Premier Cru vineyard, the wine made in this small climat share the softer, more rounded characteristics synonymous with Fourchaume, while also possessing a distinctive zingy minerality. It also happens to be one of Domaine Yvon & Laurent Vocoret's most notable vineyards in their holdings, with vines averaging 40 years of age. This beautiful drop strikes a finely tuned balance between ripe stone fruit, acidity and stony notes. Laurent himself recommends enjoying his wines “with scallops or seafood, followed by a red wine from the Rhone Valley with a good rib-eye steak, all around a meal with family or friends” - and I don’t know about you, but that sounds to me like a recipe for a fantastic time.

1x Domaine Yvon & Laurent Vocoret Chablis AOC 2023
White — Chardonnay
Chablis AOC — France
This is Chablis back to its essentials: citrus brightness, green apple crunch, pefect balance and that unmistakable mineral edge that makes Chablis feel so fresh, precise and food-ready. The Vocoret name is deeply tied to Chablis, with family winemaking roots in the region going back generations. That sense of place matters here. Lean, cleaner and more focused, built around freshness, texture and a long, dry finish. Pour it with oysters, prawns, grilled fish, roast chicken or creamy cheeses. Or just chill it down and let it do what good Chablis does best: refresh, sharpen the appetite and make the next glass feel inevitable.

1x Domaine Yvon & Laurent Vocoret Petit Chablis 2023
White — Chardonnay
Chablis AOC — France
Nothing 'petit' about this one - it has all the focus and fruit purity anyone could ask for. Throw in a piercing acid line and that signature Chablis minerality and you've got a truly wonderful wine on your hands. People keep talking about Vocoret as an emerging talent, but for us they're fully realised – a certified master who has risen to the top of the world's most competitive market. This has all the Petit Chablis hallmarks – white blossom and cool stone fruit aromatics with pithy, fleshy citrus on the palate that's wrapped tightly around a lively mineral baseline. Palate weight offers relief from what is peppy, punchy acidity right out of the gate. The finish is marked by classic salinity and the realisation that you just swallowed greatness.

1x Domaine J.F. Protheau Chablis Chardonnay 2024
White — Chardonnay
Burgundy — France
Pure, precise, yet utterly drinkable. Classic Chablis done just how we like it. Bright, clean, unmistakably minerally and honestly a bit exciting if you’re a sucker for proper high-quality Chablis. Jean-François Protheau has nailed the brief here: green apple crunch, citrus zip, white flowers and that mineral edge that Chablis fans cheer for like it’s football team. The acidity sits higher than your everyday chardy too, so none of that oily richness - just clean lines, tension and a dry, refreshing finish that leaves your palate begging for another hit. And food pairings? Couldn’t be more classic. Think oysters, shellfish, crustaceans, goat cheese - all the salty, briny, creamy things Chablis loves to show off with. This is an absolute must-have for warmer months!

1x Domaine Marillier Père et Fils Petit Chablis 2024
White — Chardonnay
Burgundy — France
Marillier have coaxed something genuinely impressive out of higher-sloping vineyards in the Chablis appellation - a wine that punches well above its designation and, frankly, outperforms many bottles labelled simply "Chablis" at twice the price. Unoaked, stainless steel vinified and completely alive with the kind of steely, saline minerality that makes this corner of Burgundy so uniquely compelling. Crisp orchard fruit, green apple, a squeeze of citrus and that unmistakable oyster shell quality on the nose. The palate is fresh and focused, with an attractive creaminess through the mid-palate that gives it texture and weight without ever sacrificing the wine's natural brightness and drive. This is classic Chablis character - cool, precise and completely refreshing - at a price that makes it an absolute no-brainer. Oysters, seafood, a good soft cheese or just a warm afternoon with nowhere particular to be. All excellent options.
