Why do we love this case?

Here, we bring you the best of the best. These are the wines that our producers have loved so dearly that they've kept a few behind at the cellar for their future selves (and, some lucky customers who might get the winemakers on a good day). We've had to do some really sweet talking, a little bit of begging, and a lot of string-pulling to curate this case. Presenting: the inaugural Aged. Shiraz. Selection. It feels good to say it, and even better to drink it.

With juice from the classic Greenock Vineyard, the winemaker (and Master of Wine), specially selects a tiny portion of the best barrels to create a smooth but gutsy shiraz with astounding regional expressivity.
A richly textured and full-bodied wine designed to drink beautifully in its youth but has the structure and fruit concentration to age for a further 10 years. Pure black and red fruit, vibrant acidic structure and pillowy, fine-grained tannins; all this coupled with a healthy maturation in brand new American oak barrels create a chocolatey, silky and wholly mouth-filling wine. Throw in a few years of age and you've got a well-integrated, classically Barossa shiraz with a long life ahead of it. Drinking now? Decant for 30 minutes for best results!

Deep, dark, and utterly compelling, this is a wine that gets into your and refuses to be forgotten. On the nose, it’s all rich perfume and fruit complexity - dark berries, smoked game, dried herbs, cake spice. The palate's a bit of a different story, big, plush, and powerfully structured. There’s real depth and drive here, with dense plum and blackberry fruit, muscular tannins and a long, dry finish that draws you right back in for another sip. Age has somewhat tamed the beast - the tannins are polished, the fruit is singing, and the shape and structure of the whole wine are working together beautifully. It’s still a wine of immense strength and character, but the edges are beautifully smoothed out. Expect cedar, sandalwood, spice, and a sheet of chewy, mouth-coating tannin that lasts and lasts and lasts. If you like your reds bold, brooding and built to go the distance, this is absolutely your jam.

What is immediately impressive here is the way the fruit still sits right at the fore. It's a summer berry mix with blueberry and plum leading the way - classic McLaren Vale in every way. Lifted and punchy acidity gives the wine youthful zeal and a lot of promise for the future still. There's a little bit of a savoury green, grassy note that provides an all important to the freshness of the fruit profile. Powerful to be sure – it has a rich, dense core. There's menthol and eucalypt on the periphery. This is a really special wine and a study in what aged wine can and should look like. If ever I needed to convert someone to the nuance, intricacy, and sheer other-worldly enjoyment of aged reds, this is what I would reach for.

Eden Valley elevation meets old-vine intensity - this is why we cellar wines. From vines planted in the early 1980s at 430 metres elevation, this Eden Valley classic showcases exactly what happens when cool-climate precision meets decades of vine maturity. Hand-harvested in the cool morning air, basket-pressed, then ten months in top-quality French oak - this is winemaking done right. The nose tells the whole story: Sarsaparilla, mulberries and fresh vanilla bean grip the drinker immediately, while crushed blackberries and black plums add depth. There's a cedary thread that seasons rather than dominates, plus hints of violets, graphite, and that distinctive Eden Valley spice that makes collectors weak at the knees. On the palate, this bad-boy means business. An intense, dark-fruited core with sustained berry flavours and fine-grained tannins that fold seamlessly into a lasting finish. The mid-palate delivers a burst of plush fruit that signals serious aging potential, while great tannin focus through the middle gives it structure and grace.
TLDR: we are absolutely ON here!
