Rarely do you open wine when it’s in the perfect drinking window, but alas, we have one for you. With almost a decade in the bottle, its tannins have softened to perfection. Robust and vibrant dark berries are still at the core, but the layers are opening up, offering roasted notes, cigar box, olive tapenade and mineral warmth. Cabernet sauvignon with perfectly aged, fine tannins is genuinely such a pleasure; it makes you wonder why we don’t always wait ten years. An outstanding cabernet, wow, this really over-delivers.

We’ve now seen two vintages of this ripper deal fly out the door. For those in the know, this wine never disappoints upon pulling the cork. This cellar release may have eight years of development behind it, but give it a taste and you’ll see that it is only starting to touch its prime drinking window. This wine is usually exclusive to the producer’s database, but somehow our charming wine buyers have managed to get some for the site. Each glass of this cabernet is sure to be excellent and intriguing. The once boisterous tannins have now mellowed on the silky palate, and fruit is joined by herbaceous and somewhat meaty notes. There’s still classic cabernet cassis and blackberry, which is accompanied by rosemary, thyme and a long and savoury finish. Be quick, mofo, ‘cos this wine has been known to fly quick!

Guess who’s back and ready to go? One of our favourite Coonawarra producers, Penley Estate, has done the hard work to bring back this mofo fave drop. Aptly named, this robust cabernet packs a punch with strong, flavourful and classic Coonawarra characteristics we’ve all come to love and enjoy. Dark fruits of the black forest abound and surround the recogniseable cedary, minty core; while framed with superb mineral tannins that allow for youthful drinking while still earning a nook in your cellar over the next 10+ years.

You’ve got dark fruits like blackberry and cassis, wrapped up in some earthiness and fine tannin structure with hints of chocolate and mint. There’s some restraint there, making this quite the food wine but lovers of fruit-driven cab sav won’t be let down.

This is an all-family affair, with the new generation stepping in to take the reigns. They’re finally releasing some beauties from their back vintages, and we were quick to jump in and bring our mofos that aged goodness. Cabernet off their currency creek vineyards gave this wine the confidence to see it through the last 6 years, with more still to come. This is the kind of wine that greets you like an old friend. Instantly familiar and merry, sure to entertain you for hours.

Did we hear you call for aged cabernet? We don’t blame you, it’s the stuff of *insert god here* when you get it, and we’re not even talking about the really good stuff. Our producers in Wrattonbully do it best when it comes to cab, benefiting from the rich limestone and terra-rosa soils that neighbouring Coonawarra boasts. Come to expect lashings of blackcurrant and dark cherries, interlaced with fine grained tannins and a persistent finish. Beautiful, structured, elegant, and worth the wait.
