1x Devitt & Moore Captain D. Bruce Cabernet Sauvignon 2013

Red — Cabernet Sauvignon

Coonawarra — Australia

Rarely do you open wine when it’s in the perfect drinking window, but alas, we have one for you. With almost a decade in the bottle, its tannins have softened to perfection. Robust and vibrant dark berries are still at the core, but the layers are opening up, offering roasted notes, cigar box, olive tapenade and mineral warmth. Cabernet sauvignon with perfectly aged, fine tannins is genuinely such a pleasure; it makes you wonder why we don’t always wait ten years. An outstanding cabernet, wow, this really over-delivers.

You'd pay $120 full price.

1x Reschke RSR Cabernet Sauvignon 2014

Red — Cabernet Sauvignon

Coonawarra — Australia

We’ve now seen two vintages of this ripper deal fly out the door. For those in the know, this wine never disappoints upon pulling the cork. This cellar release may have eight years of development behind it, but give it a taste and you’ll see that it is only starting to touch its prime drinking window. This wine is usually exclusive to the producer’s database, but somehow our charming wine buyers have managed to get some for the site. Each glass of this cabernet is sure to be excellent and intriguing. The once boisterous tannins have now mellowed on the silky palate, and fruit is joined by herbaceous and somewhat meaty notes. There’s still classic cabernet cassis and blackberry, which is accompanied by rosemary, thyme and a long and savoury finish. Be quick, mofo, ‘cos this wine has been known to fly quick!

You'd pay $75 full price.

1x Penley Estate Black Bull Cabernet Sauvignon 2021

Red — Cabernet Sauvignon

Coonawarra — Australia

Guess who’s back and ready to go? One of our favourite Coonawarra producers, Penley Estate, has done the hard work to bring back this mofo fave drop. Aptly named, this robust cabernet packs a punch with strong, flavourful and classic Coonawarra characteristics we’ve all come to love and enjoy. Dark fruits of the black forest abound and surround the recogniseable cedary, minty core; while framed with superb mineral tannins that allow for youthful drinking while still earning a nook in your cellar over the next 10+ years.

You'd pay $50 full price.

1x Geoff Hardy K1 Cabernet Sauvignon 2019

Red — Cabernet Sauvignon

Adelaide Hills — Australia

When in the right hands, cabernet from the Adelaide Hills can really hit the mark. We’ve got one here made by what we’d consider a household name in the wine world. You’ll undoubtedly know who it is when you receive this wine. What’s in the bottle, you ask? You’ve got dark fruits like blackberry and cassis, wrapped up in some earthiness and fine tannin structure with hints of chocolate and mint. There’s some restraint there, making this quite the food wine but lovers of fruit-driven cab sav won’t be let down.

You'd pay $45 full price.

1x Watkins Cellar Reserve Cabernet Sauvignon 2016

Red — Cabernet Sauvignon

South Australia — Australia

These producers might be a new name to some, but their time in the industry goes way back. As evidenced by this cellar selection, they’ve honed the art of crafting wines that stand the test of time. This is an all-family affair, with the new generation stepping in to take the reigns. They’re finally releasing some beauties from their back vintages, and we were quick to jump in and bring our mofos that aged goodness. Cabernet off their currency creek vineyards gave this wine the confidence to see it through the last 6 years, with more still to come. This is the kind of wine that greets you like an old friend. Instantly familiar and merry, sure to entertain you for hours.

You'd pay $35 full price.

1x Pepper Tree Limited Release 'Block 7' Cabernet Sauvignon 2015

Red — Cabernet Sauvignon

Wrattonbully — Australia

Did we hear you call for aged cabernet? We don’t blame you, it’s the stuff of *insert god here* when you get it, and we’re not even talking about the really good stuff. Our producers in Wrattonbully do it best when it comes to cab, benefiting from the rich limestone and terra-rosa soils that neighbouring Coonawarra boasts. Come to expect lashings of blackcurrant and dark cherries, interlaced with fine grained tannins and a persistent finish. Beautiful, structured, elegant, and worth the wait.

You'd pay $35 full price.

Frequently Asked Questions

Cabernet Sauvignon earned its royal title through its remarkable versatility and global success. Originally from Bordeaux, this grape produces wines ranging from elegant and bright to powerfully rich, adapting brilliantly to different climates and winemaking styles. Its thick skins provide natural tannins and deep colour, while its late ripening allows for complex flavour development. The grape's ability to age gracefully and express terroir distinctly has made it the benchmark red variety worldwide.

The vintage range from 2013 to 2021 showcases how Cabernet Sauvignon evolves with age and reflects seasonal variations. Older vintages like the 2013 Captain D. Bruce will display more developed tertiary flavours of leather and cedar, with softened tannins. Mid-range vintages offer a balance of fruit and development, while the 2021 Penley Estate represents youthful vigour with primary fruit flavours. Each vintage captures the unique weather patterns and winemaking decisions of its year.

The diverse flavour profile spanning from blackcurrant and mint to chocolate and leather makes this selection incredibly food-friendly. Classic pairings include grilled red meats, lamb with rosemary, and aged cheeses that complement the wine's tannin structure. The herbaceous notes pair beautifully with Mediterranean herbs, while the spice and vanilla elements enhance dishes with similar seasonings. The varying palate weights mean you can match lighter bottles with mushroom dishes and reserve the more powerful expressions for rich braises.

This multi-regional approach demonstrates Cabernet Sauvignon's remarkable adaptability across Australia's diverse wine regions. Each region contributes unique characteristics - some may offer more herbaceous, cool-climate elegance while others provide sun-soaked richness and power. By including various regions, you experience how soil types, elevation, and climate influence the same grape variety. This educational journey reveals why Cabernet Sauvignon thrives globally and helps you discover your preferred regional expression.

Start with the lighter, more elegant styles before progressing to the powerful expressions to avoid palate fatigue. Consider tasting chronologically by vintage to observe how Cabernet Sauvignon develops over time, or compare regional differences by tasting wines from the same vintage year. Allow each wine to breathe for 30-60 minutes before tasting, as Cabernet Sauvignon benefits from aeration. Take notes on the varying expressions of classic Cabernet characteristics like cassis, cedar, and tannin structure across the different producers.
