2x Byron & Harold Gravity Black Cabernet Sauvignon 2022

Red — Cabernet Sauvignon

Margaret River — Australia

This champions bold flavours and refined elegance. Margaret River cab sits somewhere in between medium and full-bodied when it comes to palate weight, but that allows for finesse and pure fruit expression in abundance. That's what's on full display in this recurring bestseller. Blackcurrant, ripe plum, and hints of cedar mingling with earthiness and vibrant fruit. On the palate, layers of blackberry, dark cherry, and cassis interlace seamlessly, supported by structured tannins. Dark chocolate and subtle oak add complexity to the long, lingering finish. This wine embodies the hallmark Margaret River style, showcasing a perfect harmony of richness, balance, and the region's distinct terroir.

You'd pay $60 full price.

Oh, in comes a smattering of smokey spice, a dollop of dark jammy fruits, and an emerging earthy tone that sets everything in its place.

You'd pay $55 full price.

2x Di Fabio Winemaker's Selection Cabernet Blend 2016

Red — Cabernet Blend

McLaren Vale — Australia

McLaren Vale cabernet can only be described as decadent. McLaren Vale cabernet after 9 years in the cellar can only be described as nothing short of indulgent. Plush, rich blackberries and plums with a raspberry like acidity and wonderfully soft tannins. There's a good lick of oak but nothing distracting, a hint of eucalypt but it stops short of menthol. This wine's time in the cellar has done it absolute wonders - soft, smooth, silky, yet powerful, plush and ripe. A great wine from one of McLaren Vale's greatest producers.

You'd pay $50 full price.

2x Hollick Red Ridge Cabernet Sauvignon 2020

Red — Cabernet Sauvignon

Coonawarra — Australia

Estate fruit from the famed Hollick vineyards in Coonawarra, this is cab sauv like Aussies know and love. Certainly, a little bit of age behind this number has helped to fill out the mid palate, making it rich and dense with threads of fennel and mint throughout. It's very hard not to enjoy this wine- and we're speaking from experience.

You'd pay $35 full price.

2x Rymill The Dark Horse Cabernet Sauvignon 2022

Red — Cabernet Sauvignon

Coonawarra — Australia

Everyone needs a wine like this in the cellar. Nothing over the top, nothing flashy, nothing trendy - a real workhorse. Regionally and varietally perfect, a bottle to reach for when you feel like 'a Coonawarra cabernet' and what a Coonawarra cabernet it is! Plum, blackcurrant, liquorice and refined oak leap out of the glass and, joined by a weighty texture and soft tannin, fill out the entire palate. The natural acid brings a lively, 'light-on-its-feet' brightness to the palate and extends the flavoursome finish. There's hints of mint and Eucalypt, as you'd hope from Coonawarra, but nothing that's going to put off anyone new to the region. If you've never tried Coonawarra cabernet but always wondered what it tastes like - this is what it tastes like.

You'd pay $25 full price.

Coonawarra — Australia

Frequently Asked Questions

This curated selection showcases the incredible diversity of Australian Cabernet Sauvignon across different regions and winemaking philosophies. Each of the six bottles represents a unique terroir expression, from Coonawarra's terra rossa soils to various premium vineyard sites. The collection spans vintages from 2016 to 2022, allowing you to explore how Cabernet develops and how different years influence the grape's character, making it an educational journey through Australia's premier red variety.

Start with the younger, more vibrant 2022 vintages like the Byron & Harold or Rymill, then progress to the more developed 2020 bottles from Reschke and Hollick. The 2016 Di Fabio blend will show how Cabernet evolves with age, developing secondary flavours of tobacco and earthy complexity. Decant the wines 30-60 minutes before serving to allow the full-bodied tannins to soften and the complex flavour profile of plum, blackcurrant, and spice notes to fully emerge.

These rich, full-bodied Cabernets are perfect partners for robust dishes that can match their intensity and tannin structure. Think grilled ribeye steaks, slow-braised lamb shanks, or aged hard cheeses like vintage cheddar. The earthy and spice notes in these wines also complement mushroom-based dishes, while the blackberry and plum characteristics pair beautifully with game meats. The eucalyptus and mint undertones make them particularly suited to herb-crusted roasts.

This collection offers both immediate drinking pleasure and cellaring potential, depending on the specific bottle. The 2022 vintages are drinking beautifully now with their fresh fruit expression, while the 2020 bottles are in their prime drinking window. The 2016 Di Fabio blend demonstrates how well these Cabernets age, developing complex secondary flavours. Most of these wines will continue to evolve gracefully for 5-10 years, with the museum release and estate-grown examples having particularly strong aging potential.

The impressive scores, including 95 points from Wine Orbit and consistent 4.0 Vivino ratings, reflect the exceptional quality and craftsmanship across this selection. These ratings indicate wines that punch well above their weight class, offering characteristics typically found in much more expensive bottles. The 'Killer Vintage' and 'Dangerous Value' designations suggest these represent outstanding years for their respective regions, while the 'Museum Release' and 'Iconic Winery' ratings highlight the pedigree and collectibility of certain bottles in the pack.
