From one of our favourite Barossa producers, who have brought us multiple 98 and 99 pointed drops before, comes this incredible special release shiraz that will continue to improve for the next 20 years. Careful maturation in specially selected highest-grade French oak, followed by barrel selection of the finest juice, has helped craft this unparalleled expression of the country's top grape/region combination. Compellingly complex, the nose shows rich, ripe plums and bramble fruit with black cherries. Supporting is an excellent intermingling of charcuterie, black olives, cocoa and liquorice. The palate is simultaneously refined and powerful, with beautifully ripe tannins and a clean line of acidity supporting an incredibly long finish. This is premium Barossa at it's absolute best.

As a general rule, the older the vines, the better the wines. But why? Well, the simplified answer is that as grape vines mature they begin to produce less fruit. As a result, all of the energy, all of the sun and soil, all of the flavour is condensed into less grapes, so you end up with highly concentrated, perfectly balanced fruit with the capacity to create extremely low quantity, extremely high quality wines that could out-last religion. This gorgeous wine is everything you'd expect from these world-famous vines and more. A complex bouquet of dark berries, cake spice, charcuterie and cedar lure in the lucky drinker and sets them up for a beautifully concentrated palate that feels both nuanced and assertive. And that's it, this wine imposes itself on any situation that it finds itself in, in the best possible way. Completely captivating.

It would be quite appropriate to say that this St Hallett is nothing short of an ICON of the Australian wine industry. A well known and universally revered brand. Well, this is their flagship, the Old Block Shiraz, it doesn't get any better than this. A wine that regularly delights the critics and finds its way into the most discerning cellars. Some of the fruit used comes from vines planted over 150 years ago and the wine spends over a year in 25% new French oak. It’s pure silk on the palate, endlessly elegant and surprisingly light on its feet despite the depth of flavour. Plum, cinnamon, dark chocolate, pepper and cedar intertwine, making for some heady drinking. We’re loving how it’s going now, but can’t wait to see it after a decade and then two decades. Do you have the patience?

A wax dipped, deeply layered beauty out of the hands of Schild Estate, on of Barossa's most adored producers. Macerated plums, fresh vanilla pods, cracked pepper and roasted coffee beans are just some of the layers that you can expect here. Did we mention a robust, silky palate? That's right, this is a wine of very high calibre. Given Schild Estate is all about their heritage estate vineyards, I guess we should never have been surprised at how good this could get.

McLaren Vale — Australia
Wonderfully textured, the wine is built around a long mineral acidity which carries intensity through the palate. White pepper, cedar and elegant allspice notes linger throughout the lengthy, linear finish. Matured for 20 months in 85% new French, 5% New American and 10% Seasoned French Oak hogshead barrels - drink it now or dig a hole in your backyard and forget about it. You could age this one for 15 years if you wanted but we're willing to bet you won't be able to keep your hands off it for that long!
