1x Aylesbury Estate The Pater Series Chardonnay 2023

Ferguson Valley — Australia
This one's been treated to the full winemaker’s toolkit: cool morning pick, whole-bunch pressed, fermented in new and seasoned oak, partial malo and plenty of bâtonnage for that creamy, layered mouthfeel. So what do we end up with? Ripe peaches and nectarines jump out first, then a soft layers of cashew and brioche. On the palate, it’s stone fruit all the way, golden peach and lemon curd all supported by toasty oak and a zesty citrus line that keeps things fresh and focused. It’s concentrated, polished, and totally moreish. A wine that brings the opulence but never loses its balance. Margs chardonnay fans will be huge on this one. This is seriously special...

The sheer amount that is going on in this wine is something to behold. Mineral, creamy and concentrated - time and time again this has emerged as an iconic Mofo wine. There's a lick of lime-like acid that gathers on the gums, lifting the juicy yet creamy palate. The wine spent 9 months on lees in barrel with only a minimal percentage of malo to allow the limey minerality to be preserved in this full and rich chardy that sees freshness expertly prevail throughout. Mouthwatering and persistent from start to finish – This is Margs chardy through and through.

This is chardy with its shirt tucked in, top button undone. From the first swirl, you’re hit with ripe peach and fresh apple, all enveloped in vanilla, roasted hazelnut and that irresistible buttery pastry note. It’s rich and creamy, yet bright and lively - a balancing act pulled off with complete ease. The acidity keeps things fresh, the texture is consuming, and the finish just keeps going and going and going. Stylish, layered and seriously stylish. We know we said 'stylish' twice... it's really stylish.

White — Chardonnay
Margaret River — Australia
Big, broad citrus flavours lead the fruit profile with some ripe red apple, nectarine, and tropical melon flavours following tightly behind. The oak profile is steeped in vanilla bean and sweet spice, and in classic Margs style its present but never over-bearing. A bit of wafty sea breeze (is that the Indian Ocean we’re picking up?) coupled with a steely minerality that chimes in on the finish. While this is a new wine to us, the producer is an absolute Mofo fave.

Green apple and pear initially, with focused, laser-like citrus acidity that races up the centre of the palate. Some nutty, mealy, biscuity savoury notes chime in just after and offer another dimension to the wine. This is a beautiful expression of fruit - lifted and aromatic and tantalisingly refreshing. Seriously limited wine from an already small producer - get in quick or miss out.

Mornington Peninsula — Australia
This is chardy that strikes a fine balance between fruit richness and acidity, with just enough oak influence to round it out. Pure fruit intensity and a rounded texture, Mornington chardonnay in full flight. Perfection. This wine is quite plainly a labour of love. It's a masterclass in careful consideration of every step, with the end goal being true balance - a finely tuned wine that expresses time and place. The ripe fruit is developed and firmly grounded in the grapefruit and lemon citrus spectrum. There is creamy breadth to the wine, a softness and suppleness on the palate that's flanked by assured acidity and freshness. The finish is marked by generous yet not overstated or flashy oak. This is excellent Mornington chardonnay - the only downside is its relative scarcity. Get in quick chardy lovers.
