To say these wines are one-offs is an under-statement. We know shiraz is Australia's darling, and the demand for it is always red hot. So, to get a few cases of these exclusive cellar reserves is no easy task.

Why do we love this case?

Here, we bring you the best of the best. These are the wines that our producers have loved so dearly that they've kept a few behind at the cellar for their future selves (and, some lucky customers who might get the winemakers on a good day). We've had to do some really sweet talking, a little bit of begging, and a lot of string-pulling to curate this case. Presenting: the Aged. Shiraz. Selection. It feels good to say it, and even better to drink it

1x Parous Stonehouse Shiraz 2019

Red — Shiraz

McLaren Vale — Australia

There's nothing you won't adore about this beauty. All the juicy, chocolate notes of McLaren Vale shiraz, with a bit of rum n' raisin spiciness bringing some real game. An old school style from a mordern McLaren Vale winemaker.
Made by the grape master Matt Head (who you might also know from the cult favourite Big Easy Radio) whose creative and level-headed approach to life results in wines with spirit and soul. This parcel has been safeguarded under the Parous label, just waiting for its time and loving home to go to. It must be your lucky day mofo, because they've found it with you. It's powerful, but not overwhelming; the perfect choice to keep you entertained from weeknights to the weekend.

Drink : Now - 2032

1x Di Fabio Bushvine Reserve Shiraz 2019

Red — Shiraz

McLaren Vale — Australia

Wow, what a wine. A must-have for any McLaren Vale die-hards or pretty much anyone with a mouth and a heart. Rich dark fruit, chocolatey oak and fine-grained tannins. A classic Aussie style with 8+ years under the belt, primed and raring to go. Di Fabio Estate are a real wine-producer's producer. With a history in Australia dating back to the mid 60's, and much much longer in Italy, the Di Fabio family earned their stripes selling grapes to some of McLaren Vale's biggest names. As the years went by and whispers of their fruit's fantastic quality grew louder, they transitioned into full wine production and when we taste this gorgeous drop, we're so happy that they did. With premium fruit from old bush-vines in the Blewitt Springs sub-region, and a little bit of generational know-how, Di Fabio has crafted the ultimate people-pleaser. A dense, dark fruited wine that, although full-bodied, doesn't feel sluggish or clunky on the palate. Lively and rich blackberries and dark cherries are balanced by milk chocolate and sweet spice, a result of a very comprehensive oak treatment regime. This is a wine that was drinking beautifully five years ago, drinks beautifully today and will still be drinking beautifully in five years time. If you're a McLaren Vale fan, do yourself a favour.

You'd pay $80 full price.

1x Leasingham Wines Single Vineyard Shiraz 2018

Red — Shiraz

Clare Valley — Australia

Clare Valley Shiraz doesn't get nearly enough attention. That's about to change. Eight years of bottle age has turned this into a perfect example of what Clare shiraz becomes with time - the tannins have softened and integrated beautifully, and the wine has settled into a richness and complexity that's deeply satisfying. This producer has been quietly making some of the most consistently excellent red wine in South Australia since the 1890s - a track record that includes Jimmy Watson trophies, Langton's Classification status, and a reputation built on doing things properly for well over a century. The single vineyard release is where that heritage really shows. Old vines, dry-grown on terra rossa and slate in the Clare's natural rain shadow. The kind of site that produces fruit with an intensity and concentration that irrigated vineyards simply can't replicate. Blackberry, raspberry, mocha and dark chocolate, with a savoury depth and a firm structure that tells you there's plenty more development ahead. French oak maturation has added weight and texture without ever dominating the fruit. Drink it now with something substantial off the grill, or put it down for another five to ten years. Either way, this is Clare Valley Shiraz punching well above its weight.

You'd pay $80 full price.

1x Aramis The Heir Shiraz 2018

Red — Shiraz

McLaren Vale — Australia

"This is why red wine is cellared" - Campbell Mattinson. Let's not beat around the bush, this is a big shiraz, even by McLaren Vale's standards. Years of careful cellaring has brought a smoothness and silkiness to this wine, whilst not stifling the natural grunt and gutsiness of this gorgeous drop. Aged shiraz, done very, very, very well. A few years on and absolutely strutting its stuff. As Mattinson noted, this is exactly why we cellar red wine. It’s all come together beautifully - rich notes of coffee, blackberry, leather and earthiness meet sweet spice, hints of liquorice, and a long list of other subtleties. The palate’s smooth, layered and complete, framed by fine, resolved tannins that still hold the structure beautifully. All the promise it showed in its youth? Fully delivered. This is a mature stunner, right in the sweet spot.

You'd pay $80 full price.

1x Geoff Merrill Pimpala Vineyards Shiraz 2017

Red — Shiraz

McLaren Vale — Australia

This is single-vineyard shiraz, (personally) barrel selected from the reserve range. Not to be confused with Geoff Merrill’s ‘Pimpala Road’ range, this Pimpala Vineyard shiraz is genuinely on a whole new level. Don't miss out on this, wonderful stuff. This has spent no less than 20 months in French and American oak barrels, plus over three years in the cellar to let all its powerful fruit and decadent oak flavour all meld together. It’s like liquid black chocolate cake, with the Vale’s dark chocolate and heady spice flavours oozing head-on into dark cherry, blackcurrant leaf and roasted coconut. We’re always happy to see Geoff’s wines in the warehouse, and even happier to see them in our glass.

You'd pay $65 full price.

1x Handpicked Regional Series Shiraz 2016

Red — Shiraz

Barossa — Australia

A wine company, unlike any other. Think of them more as a team of grape nomads of the wine industry, travelling the best vineyards in search of vinous enlightenment and the holy grail of grape juice. On the 2016 trip they’ve come home with a rare shiraz from only the best vineyards - localised in the beautiful Barossa. Better unpack your bags and settle in, this one's got legs. Hailing from a hyper-focussed selection of only the very best fruit in the numerous sub-regions of the Barossa, this is a powerful and impressive shiraz. Made all the more impressive by the fact that there's only a tiny amount on offer. With lashings of rich, ripe fruit and a subtle earthy complexity, this explorer is full of spicy berries and just a hint of dark chocolate. Scrumptious shiraz has never travelled so well. Happy days! The freedom offered only to those dedicated enough to navigate their way in wine, knowing exactly what they are looking for is on full display here. Not limited by region or style, these legends grab the best fruit they can, for their exact purpose. Lucky for us that purpose is making really, really, really good wine.
