These are the wines that our producers have loved so dearly that they've kept a few behind at the cellar for their future selves (and, some lucky customers who might get the winemakers on a good day). 1x Schild Estate Ben Schild Cellar Reserve Shiraz 2017

A tribute to the man who started the family's winemaking journey, this single vineyard Barossa Shiraz carries that weight with extraordinary grace. Hand-sorted fruit from one carefully chosen block, open fermented, then 18 months in a combination of French, American and Hungarian oak - followed by another two years of bottle maturation under optimal conditions before it was deemed ready to face the world. That kind of patience shows up in every sip. In the glass it's inky and dramatic - blackberry, liquorice and dark cherry leading the charge, with black olive, cedar, scorched earth and cracked pepper lurking underneath. The palate is full-bodied, plush and genuinely voluminous, with velvet tannins that somehow manage to be both structured and completely seamless. The finish is long, opulent and deeply satisfying. This is Barossa Shiraz made with intent, history and know-how. You can taste all three.

The second you get a whiff of this stunningly made wine - it's absolute fireworks. Think black cherry, blueberry and tangy currant all tangled up with crushed rose petal, peppercorn and olive tapenade. There’s even that classic McLaren Vale smoky-meaty thing - just another layer of complexity. It’s seductive, savoury, and utterly impossible to ignore. Then the palate hits - taut, focused, and built like a brick you-know-what. Crunchy acidity, fine talc-like tannins, and a slow build of dark fruit, French oak and spice that keeps unravelling layer after layer. It’s got muscle, sure, but it’s no brute. To use the cliche, this is an iron fist in a velvet glove - power, polish, and serious cellar potential. To drink now, decant it and pair it with a fat steak or roast lamb and you’ll be grinning. Or, if you’ve got patience (and a strong will), stash it 'til 2092 and watch it morph into something truffly, earthy and deeply complex. Completely breathtaking.

Here's a shiraz that proves, yet again, that Langhorne Creek punches well above its weight - and it's weighty as all-get-out. The wine tells its story in layers, starting deceptively subtle before building to a powerful finish that lingers long after the glass is empty. Bold winemaking that respects balance, even while delivering serious power and concentration. Full-bodied and generous, with intensity that builds as it opens up in the glass, bottle or decanter. Big black fruits meet sweet spice and biscotti-like oak, carried by super fine tannins that grow in presence, leading to a long, commanding finish. It’s bold, structured and powerful, yet everything slots neatly into place - a big style, but perfectly in balance. Aged, but not wearied, there's presence, power and purpose in the glass. You could comfortably put this down for another 10 years, if you're into that sorta thing...

Wow, what a wine. A must-have for any McLaren Vale die-hards or pretty much anyone with a mouth and a heart. Rich dark fruit, chocolatey oak and fine-grained tannins. A classic Aussie style with 8+ years under the belt, primed and raring to go. Di Fabio Estate are a real wine-producer's producer. With a history in Australia dating back to the mid 60's, and much much longer in Italy, the Di Fabio family earned their stripes selling grapes to some of McLaren Vale's biggest names. As the years went by and whispers of their fruit's fantastic quality grew louder, they transitioned into full wine production and when we taste this gorgeous drop, we're so happy that they did. With premium fruit from old bush-vines in the Blewitt Springs sub-region, and a little bit of generational know-how, Di Fabio has crafted the ultimate people-pleaser. A dense, dark fruited wine that, although full-bodied, doesn't feel sluggish or clunky on the palate. Lively and rich blackberries and dark cherries are balanced by milk chocolate and sweet spice, a result of a very comprehensive oak treatment regime. This is a wine that was drinking beautifully five years ago, drinks beautifully today and will still be drinking beautifully in five years time. If you're a McLaren Vale fan, do yourself a favour.

This is one producer that made waves with our mofos in the last year. They came onto the scene hot, all due to their jaw-dropping wines that we could offer you at eye-popping prices. When we hear they had been holding some of their 2017 shiraz for a special cellar release, we just had to be a part of it. So here you go: immaculately made, impeccably cellared shiraz from the best of the best. Now that is a good deal.

McLaren Vale — Australia
This is single-vineyard shiraz, (personally) barrel selected from the reserve range. Not to be confused with Geoff Merrill’s ‘Pimpala Road’ range, this Pimpala Vineyard shiraz is genuinely on a whole new level. Don't miss out on this, wonderful stuff. This has spent no less than 20 months in French and American oak barrels, plus over three years in the cellar to let all its powerful fruit and decadent oak flavour all meld together. It’s like liquid black chocolate cake, with the Vale’s dark chocolate and heady spice flavours oozing head-on into dark cherry, blackcurrant leaf and roasted coconut. We’re always happy to see Geoff’s wines in the warehouse, and even happier to see them in our glass.
