1x Adeus White Blend 2021

White — White Blend

Ribeiro DO — Spain

You may have heard of Galicia in Spain’s far northwest. Surrounded by the Atlantic Ocean and the Cantabrian Sea, there’s no doubt that maritime influences are what this region is all about. Zoom into the region of Ribeiro, nestled between Rias Baixas and Ribeira Sacra, where fresh, floral whites thrive and provide genuine value. Treixadura and torrontés make up this white blend. Treixa-what and torro-who? Just think the best aromatics of riesling and sauv blanc mingled with the body of a warm region chardonnay. Delicate on its feet, but delivering a punch. This may seem like a shy wine, but it’ll show you its confident side.

You'd pay $38 full price.

1x Twin Valleys Fiano 2022

White — Fiano

King Valley — Australia

Fiano is one of the newer Italian arrivals on the scene and we couldn’t be happier that it’s here. Fiano is a versatile grape and suits a lot of growing conditions, from the Mediterranean climate of McLaren Vale to the alpine freshness of the King Valley. This KV example is a touch lighter and brighter than what you’d get from the Vale - sitting closer to grigio than say, viognier. There is still heaps of fruit and florals in this wine and acid to accompany all sorts of foods - though no doubt best with something southern Italian.

You'd pay $27 full price.

1x Wanted Man Wines Marsanne Rousanne Viognier 2013

White — White Blend

Heathcote — Australia

I won’t lie, the first time I tried this wine I was sceptical. I had, in my head, what I imagined would be a flabby and past-its-best wine. Boy, could I have been more wrong? This is electric, exciting, exotic and bursting with life. A great contender for even some of the most polished Rhône white blends (from which this wine gains its inspiration). A firecracker in the mouth, you’ll be able to find all the classic ‘aged’ notes of honeycomb, almonds, toasted walnuts, and perhaps a bit of hay. But then it’s so much more, still showing fresh stone fruit and a citrus core that will not give up the ghost. I’ll proudly admit that this wine proved me wrong, and took home the trophy.

You'd pay $27 full price.

1x Fika Ancestral Method Pet Nat 2022

Sparkling — Sparkling White

Nagambie Lakes — Australia

The popularity of ‘pét nat’ is worth every sparkling wine lovers attention. A choose-your-own-adventure kind of bubbles, where you get to play James Bond in deciding how to best sip your wine. Shaken or stirred? Cloudy or clear? With ‘ancestral method’ aka. pét nat- you decide.

A sparkling made entirely by riesling - a pretty rare find in Australia. Floral and crisp, this has catapulted its way to earning a designated spot in the mofo HQ fridge. 100% riesling that’s fermented in the bottle, and released super young to keep it fun and refreshing. Think of it as a little more ‘craft beer’ than classic champagne, and never mind the cloudiness. Consider it natures way of proving sometimes an artisanal approach, or ‘minimal intervention’ can often achieve the best outcome. Perfect for sunny afternoons, picnics and instagram posts.

You'd pay $27 full price.

1x Santolin Cosa Nostra Arneis 2020

White — Arneis

Yarra Valley — Australia

A lively little Victorian - this is a beautiful expression of arneis that we can’t wait for you to try. Lemon zest, green apple, and pear combine for a punchy and fresh aroma. There’s beeswax and almond meal that adds another dimension to the tart fruit profile, all of which is underscored by a nutty spice and a bit of ocean spray. This is really versatile wine - drink with soft cheese, any shellfish, or (our recommendation) fish and chips. It’s so bright and cleansing and unfussy that it will go with just about anything, anytime. That, for us, is what winning wines are made of!

You'd pay $25 full price.

1x Swings & Roundabouts Chenin Blanc 2022

White — Chenin Blanc

Margaret River — Australia

This is about as safe a bet as there is in Margaret River. Swings and Roundabouts consistently produces excellent wines that toe the line between ripe fruit and vivid acidity. They nail their chardonnays, and if a winemaker has a deft hand with chardies, you’re almost guaranteed an excellent chenin blanc. This is luscious without being overpowering, fresh without lacking complexity. It’s a cracking example of how Margaret River delivers on its quality promise, time and again.

Frequently Asked Questions

This selection features lesser-known grape varieties like Fiano, Arneis, Marsanne, Roussanne, and Chenin Blanc instead of the ubiquitous Chardonnay and Sauvignon Blanc. These alternative varietals offer unique flavour profiles and textures that have been cultivated for centuries in their native regions but remain relatively undiscovered by many Australian wine drinkers. Each grape brings its own personality - from the honeyed richness of Fiano to the crisp minerality of Arneis - providing an exciting departure from predictable wine experiences.

The collection spans an impressive flavour spectrum from bright citrus and lime zest to richer stone fruit notes like apricot and peach, with some wines showing honeyed complexity and others displaying grassy, herbaceous characters. The minerally backbone common to many alternative varieties provides structure, while spice elements add intrigue and depth. This diversity means you'll experience everything from crisp, refreshing aperitif styles to more textured wines that can handle food pairing, all unified by their distinctive character that sets them apart from mainstream varieties.

Most alternative white varieties in this selection are designed for relatively early consumption to showcase their fresh, distinctive characteristics, though some like the Marsanne Roussanne Viognier blend can develop beautifully with age. The 2013 vintage in the collection demonstrates how these varieties can evolve, often gaining honeyed complexity and textural richness over time. Chenin Blanc and Fiano particularly have excellent aging potential, developing waxy, lanolin-like textures and deeper fruit flavours, while Pet Nat styles are best enjoyed for their youthful effervescence and primary fruit character.

Pet Nat (Pétillant Naturel) represents the oldest method of making sparkling wine, where fermentation is completed in the bottle without disgorgement, creating a naturally cloudy, lightly sparkling wine with wild, unpredictable character. This ancient technique perfectly embodies the 'alternative' spirit of the selection, offering a rustic, artisanal contrast to polished Champagne-method sparklings. The inclusion of Fika's Ancestral Method Pet Nat 2022 showcases how modern Australian winemakers are embracing traditional techniques to create wines with authentic, unmanipulated personality that celebrates the raw beauty of fermentation.

Serve these wines at cellar temperature (10-12°C) rather than ice-cold to allow their unique aromatics and textures to shine through properly. The diverse flavour profiles make them incredibly food-friendly - the grassy, herbaceous wines pair beautifully with fresh herbs and green vegetables, while the stone fruit and honeyed styles complement richer seafood and poultry dishes. The Pet Nat works wonderfully as an aperitif or with light, fresh foods, and the more textured varieties like Fiano and Chenin Blanc can handle creamy sauces and even mild spice, making them perfect for expanding your food and wine pairing horizons.
